Ingredients for Green Tea Filling For 500g filling

Mung beans 200 gr (peeled) Green tea powder 5 gr Flour 10 gr Sugar 150 gr Cooking oil 75 ml Hot water 600 ml Filtered water 90 ml

How to Choose Good Mung Beans

  • For green tea filling, you should choose peeled mung beans, as this will make the filling smoother and softer. If you choose beans with their skins on, the filling will be coarse and not tasty.
  • To choose good peeled mung beans, you should select those with a bright yellow color, firm, smooth seeds, moderate hardness, and a distinctive aroma.
  • Avoid choosing beans that are shriveled, dry, or infested with weevils. Additionally, if the beans are too hard or lack aroma, it means they have been stored for too long and may not have many nutrients left, so you shouldn’t choose those!

What is green tea powder?

  • Green tea powder is a type of powder made from grinding fresh or dried green tea leaves.

How to prepare Green Bean Filling

  • Soak the green beans

    Wash the green beans clean and remove any spoiled ones, then drain them.

    Place the cleaned green beans in a bowl, then add 150g of sugar and 200ml of hot water, stirring well to dissolve the sugar and soak for about 1 – 1.5 hours.

  • Cook and blend the green beans

    After soaking the beans for 1 – 1.5 hours, you will see that the beans have expanded and softened. At this time, add the entire mixture of green beans and sugar water into a pot, add 200ml of hot water, and bring to a boil.

    After about 5 minutes, the beans will start boiling, at which point use a ladle to skim off the foam on top and continue simmering until the beans are soft as shown in the picture, then turn off the heat.

    Use a ladle to scoop the cooked green beans into a blender, add 200ml of hot water, and blend for about 5 minutes until the green beans are smooth.

  • Sauté the filling

    Dissolve 10g of flour in 45ml of water and stir well with a spoon. Similarly, dissolve 5g of green tea powder in 45ml of water and stir until dissolved. Place a pan on the stove, add the ground mung bean mixture to the pan and sauté over low heat.

    When you see the mung bean mixture start to simmer, gradually add 75ml of cooking oil to sauté with it, while adding the oil, use a flat spatula to stir continuously. Next, gradually add the flour water and green tea water into the pan and stir continuously until the flour is completely dissolved.

    Sauté the green tea filling for about 10 more minutes until the filling becomes thick and sticky, using a flat spatula to stir until it feels heavy and thick like in the picture, then turn off the heat.

    Note: While sautéing the green tea filling, you should continuously use a flat spatula to stir gently to prevent the filling from burning!
