How to choose fresh beef
- Choose beef that is bright red with white marbling and yellow fat.
- When pressing the meat with your hand, it should have good elasticity and not stick to your hand.
- Fresh beef should have a tender, small grain, not too smooth, with a natural aroma, without any sour or strange smell.
- Do not choose meat that is pale green, dark red, has dark yellow fat, white spots, or is soft and mushy.

How to choose delicious green mangoes
- You should buy very green and sour mangoes; the finished dish will be crisp and more appealing. Do not choose mangoes that show signs of ripening or are ripe.
- For green mangoes, choose firm fruits with a white powdery exterior and dark green skin.
- Avoid choosing green mangoes that are soft, as these are usually under-ripe fruits that have been stored for a long time. These fruits will have a bland taste, not fragrant, and mushy flesh.
- If you don’t like very sour fruits, you can choose four-season mangoes or sticky mangoes.
How to choose good onions
- It is best to choose onions that are round in shape with long roots, as these are good onions. Do not choose irregularly shaped onions or those without roots, as they will not be tasty.

Prepare and marinate the beef
To clean the beef and eliminate any unpleasant odor, soak the beef in diluted saltwater for about 15 minutes, then rinse with water a few times and let it drain.
Proceed to cut the beef into thin slices suitable for eating.

- You can rub salt evenly on the piece of meat and then rinse it thoroughly with water.
- Soak the meat with a little diluted white wine for about 5 minutes and then rinse it with water.

Place the sliced beef in a bowl, marinate with 1 tablespoon of seasoning, 1 teaspoon of sugar, and 1.5 tablespoons of cooking oil, then mix well so that the seasoning evenly coats the beef and let it marinate for about 15 – 20 minutes to absorb the flavors.

Prepare the other ingredients
Wash the ingredients thoroughly, peel the onions, and then slice them thinly.
To make the onions crispy and less pungent, soak them in a bowl of cold water with 60ml of vinegar, 1 tablespoon of sugar, and mix well.
Chop 1 purple onion finely, and slice the remaining purple onion thinly. Mince the garlic.
Peel the green mango and cut it into thin strips. Mince the chili. Chop the coriander.
Chop the Vietnamese balm and mint leaves.

Make the dipping sauce
Add 1 tablespoon of sugar, 1 tablespoon of water, 2 tablespoons of fish sauce, the juice of half a lime, and 1/3 of minced garlic and 1 minced chili into a bowl. Stir well until the mixture is dissolved, and adjust the fish sauce to achieve a balanced sweet, sour, and salty taste to your liking.

Fry the spices
Put 100ml of cooking oil into a pan and heat until the oil is bubbling, then add the sliced shallots to fry fragrant over medium heat for about 5 minutes. Then remove to a bowl.
Using the same pan where you fried the shallots, add 1 tablespoon of cooking oil (utilizing the oil left from frying the shallots), then add a small amount of chopped cilantro and minced garlic, and fry fragrant for about 3 minutes.
Note: When you see the shallots just turning golden, turn off the heat and remove them to filter the oil; otherwise, the shallots will burn.

Stir-fry the beef
Add a piece of chopped pineapple along with 100ml of water into the pan, bring to a gentle boil, then add the marinated beef and stir-fry over high heat until the beef is cooked for about 10 – 15 minutes, then turn off the heat.
Tip:
- Stir-fry the beef quickly and over high heat so that it does not release water and becomes tender and not chewy.
- Do not overcook the beef, or it will become dry and tough.

Mixing the salad
Put shredded mango into a bowl, add 1 tablespoon of sweet and sour fish sauce that has been mixed and toss well. Next, add the sliced onion along with 1 tablespoon of sweet and sour fish sauce and mix evenly. Then add the chopped Vietnamese coriander and mint.
Finally, add the cooked beef into the bowl and mix well, add 1 sliced chili, crushed roasted peanuts, and half of the fried onion from step 4 and mix well. Adjust the seasoning to taste; if it’s bland, you can add more sweet and sour fish sauce.
Note:
- The beef must be completely cool before adding it; otherwise, it will make the vegetables soft and lose their crispness.
- You should use your hands or chopsticks to mix the salad gently to avoid over-mixing or crushing the vegetables, which would make them lose their crunchiness.
- Add a little fish sauce to the salad at a time and taste to avoid making it too salty.
