How to choose good wood ear mushrooms
- When selecting wood ear mushrooms, you can choose either fresh or dried mushrooms, however, dried black wood ear mushrooms are safer as fresh wood ear mushrooms contain compounds that may cause itching for some people.
- For dried wood ear mushrooms, prioritize those with large ears, thick flesh, and minimal small stems. The color should be a deep amber, slightly glossy on top and coffee milk-colored underneath.
- Avoid choosing wood ear mushrooms that are too black, as these may become mushy when soaked in water and are less crunchy.
How to make Soft Tofu with Fermented Soybean Sauce

Prepare the supporting ingredients
After purchasing the wood ear mushrooms, soak them in warm water to soften and drain. Then, shred part of them and chop the rest finely.
Similarly, for fresh ginger and chili, wash them clean, slice some into thin strips, and chop the rest finely. Chop the cilantro thinly to decorate the dish for a more appealing presentation.

Make the sauce
Place a pan on the stove, when the pan is hot, add 1 tablespoon of cooking oil, wait for the oil to heat up, then add a portion of ginger that has been minced and stir until the ginger releases its aroma.
Next, add all the minced wood ear mushrooms along with a portion of shredded mushrooms and gently stir, then turn off the heat. Gradually add 1/2 teaspoon of sugar, 1 teaspoon of seasoning, and finally add 20g of fermented soybeans.
Turn the heat back on and set it to low, then add the remaining shredded wood ear mushrooms and ginger, wait until the sauce just boils, then turn off the heat, adding a little cilantro and chopped chili.

Prepare the tofu
Wash the tofu thoroughly, cut it into bite-sized pieces, and place the tofu on a plate.
Tip: To enhance the aroma and flavor of the tofu, you can briefly blanch the tofu in boiling water. -
