Abalone 4 pieces Shark fin 1 piece (dried) Sea cucumber 1 kg Shiitake mushrooms 100 gr Jujube 10 fruits Ginger 1 piece Green onion 1 stalk Red onion 1 piece Garlic 1 clove Cooking oil 1 tablespoon Oyster sauce 1 teaspoon Sesame oil 1 teaspoon Cooking wine 2 tablespoons Tapioca flour water 3 tablespoons Common seasoning a little (salt/ sugar/ seasoning powder)

  • Typically, shark fin has a triangular shape, rough skin, and is entirely made of cartilage.
  • You can buy shark fin at reputable seafood stores with quality assurance.
  • Shark fin has various prices (updated in April 2021): dried shark fin is 9,900,000 VND/100g, fresh uncleaned shark fin is 1,290,000 VND/100g, cleaned fresh shark fin is 6,900,000 VND/100g.

Information about sea cucumber

  • Sea cucumbers have long bodies, many can be about 20cm long, with a rough, slightly bumpy body, hairy skin, and when held, sea cucumbers feel quite slimy.
  • You can buy sea cucumbers at reputable seafood stores, with prices ranging from 500,000 to 1,700,000 VND/kg (updated in April 2021).

How to choose fresh abalone

  • You should choose abalone that are of moderate size, feel heavy when held, and have thick, round meat.
  • When touched, they should have a good elasticity, no unusual sliminess, and no strange fishy smell, indicating that they are still fresh for you to purchase.
  • Avoid choosing abalone that have shells and meat that easily separate, have a strange smell, feel slimy on your fingertips, or are light when lifted, as the quality of the abalone is no longer guaranteed.

How to choose fresh and delicious shiitake mushrooms

  • Choose mushrooms with a firm stem, uniform color; if the mushrooms have opened, the gills should appear as even, beautiful, and dry strands.
  • When selecting fresh shiitake mushrooms, opt for those with a moderate cap size, tightly curled, and a slightly yellow-brown color. If you see very dark brown mushrooms, it’s best not to buy them, as they may be toxic.
  • Avoid purchasing mushrooms that have bruises or wrinkles on the caps, or are slimy.

  • Preparing Abalone

    After purchasing the abalone, use a dishwashing sponge to scrub the abalone clean, sprinkle a little salt on each abalone, and then rub firmly with your hands. After that, use a brush to scrub once more and rinse well.

    Insert a knife into the side and gently separate the abalone, cutting away the innards, then rinse with clean water.

    • It is best to use a toothbrush to scrub around the abalone, especially the edges, then gently detach the abalone meat with a spoon and remove the black innards underneath, rinsing thoroughly.
    • Rinse the abalone meat under running water to remove any remaining residues.

  • Prepare sea cucumber

    Place a basket on top of a basin made of aluminum, put the sea cucumber into the basket, add 3 teaspoons of salt, flip the basket over, and use your hands to shake the basket until the sea cucumber turns slightly white, then stop.

    Rinse with water, use a knife to scrape off any black parts on the body of the sea cucumber, and rinse clean. Then cut off the mouth, cut it in half lengthwise, and scrape out the dirty parts inside the sea cucumber.

    Place the sea cucumber in the basket, add 4 teaspoons of salt, and use your hands to squeeze the sea cucumber vigorously to release all the slime, rinse clean, and let it drain.

    Tip: You can use a brush to scrub the sea cucumber multiple times to remove the slime, then squeeze the sea cucumber with salt several times and rinse clean.

  • Prepare vegetables

    Ginger, after being purchased, is peeled, washed clean, and sliced thinly. Green onions are trimmed, washed, and cut into pieces about 2 finger lengths long.

    Put the jujube into a bowl, then pour boiling water over it to soak until the jujubes swell. Shallots and garlic are peeled, washed, and minced.

  • Boil and soak fish maw, abalone, and sea cucumber

    Put 1 liter of water and 1 tablespoon of cooking wine into a basin, add 1/2 of the sliced ginger and chopped green onion, then soak the fish maw for about 1 hour to reduce the unpleasant smell and fishy taste of the fish maw.

    Boil 1 pot of water, add 1 tablespoon of cooking wine, the remaining 1/2 of the sliced ginger, and chopped green onion along with the fish maw, and cook for 15 minutes on high heat. Remove the fish maw and place it in a bowl of ice water.

    Keep the pot of water you just used, and quickly blanch the abalone and sea cucumber one more time for about 5 seconds, then soak them in cold ice water to maintain their crispness and deliciousness.

  • Cook the soup

    Add 1 tablespoon of cooking oil to the pot, add minced garlic and onion, and when the garlic and onion turn golden, add 1.5 liters of broth, and bring to a boil.

    Tip: You can use chicken broth or vegetable broth as you like.

    Add fish maw and cook over medium heat for about 30 minutes, then add sea cucumber and cook for 15 minutes, after that add abalone, 1/2 teaspoon of salt, 1 teaspoon of sugar, 3 teaspoons of seasoning powder, 1 teaspoon of oyster sauce, and 1 teaspoon of sesame oil.

    Stir well, add dried red dates and mushrooms, cook for another 5 minutes, add 3 tablespoons of tapioca starch water, mix well, season to taste, and you can turn off the heat.

    Abalone is soft, slightly chewy with a sweet taste. Fish maw is crunchy and has a slightly salty flavor. Sea cucumber, when eaten, has a moderately salty taste and a very delicious chewy texture.
