How to choose fresh ingredients
How to choose fresh silver fish
- Live fish always provide the best flavor for the dish. Therefore, choose those that swim well, with clear eyes that show the pupils clearly.
- When pressing on the flesh, it should feel firm, not soft and should have good elasticity.
- Fresh silver fish should have a pinkish-red color; conversely, if it has a dark brown color or is cloudy, it means the fish is spoiled and will not taste good.
- Avoid buying fish with bloated bodies, weak swimming, pale color, and a strong fishy smell as they have been kept too long and are no longer usable.
How to choose fresh and delicious tomatoes
- Choose tomatoes that are red, round, plump, and have a thin, shiny skin.
- Additionally, when buying, observe the stem; if the tomato still has a fresh green stem tightly attached, it indicates that the tomato has just been harvested and will taste fresher.
- Avoid selecting overripe, bruised, or unevenly colored tomatoes; if they feel too soft to the touch, they are often either underripe or have wilted from being stored for too long.
How to choose fresh and delicious okra
- Fresh and delicious okra should have a bright green skin and still have a thin layer of fuzz on the surface.
- Moreover, choose okra that is neither too mature nor too young, of moderate size, and feels firm when held.
- Furthermore, avoid buying okra that is too soft or has a scratched or heavily bruised surface, as this indicates that the okra has been stored for too long.
- Especially, if you notice round spots on the okra’s skin, do not buy it, as this indicates that the okra is overripe, and the seeds inside have hardened, making it very bitter and unpalatable.
How to choose fresh and delicious water morning glory (Vietnamese mint)
- Water morning glory that is edible is grown in places with water, and the stem has red spots. If it has white spots, you should not buy it because that type is itchy and inedible.
- You should buy water morning glory of moderate size, not too large or too small. Additionally, the outer green skin should look shiny and not change to any unusual color.
- Avoid choosing water morning glory that has been cut or is bruised and overly dark as that is a sign that it has been stored for too long.

Prepare and marinate the fish
First, the fish should be cut to remove the gills and intestines, then rinsed with diluted salt water and washed again with clean water 1 – 2 times, then let it drain.
Next, place the fish in a bowl and marinate with 2 chopped chili peppers, 1 teaspoon of fish sauce, 1 teaspoon of salt, 1/2 teaspoon of monosodium glutamate, mix well and let the fish absorb the seasoning for 30 minutes.
How to clean the fish without a fishy smell:
- Use lemon juice mixed with warm water to soak the fish for 5 – 7 minutes, and the fishy smell will disappear immediately.
- Alternatively, an effective way to eliminate the fishy smell is to soak the fish for about 15 – 20 minutes in rice washing water.
- Additionally, ginger can be crushed and added to the water to soak with the fish for 5 – 7 minutes, and you will see immediate results.
