    Wash the sour starfruit, tomatoes, cilantro, and rice paddy herb, then cut the starfruit into slices, tomatoes into wedges, while the rice paddy herb and cilantro should be chopped into bite-sized pieces. Cut the chili into thin rings.

    Because sour bamboo shoots have a quite strong sour taste, to remove the sourness, rinse the bamboo shoots with water and squeeze them gently a few times, then let them drain.
