Young winged beans 1 kg Vinegar 1 liter Sugar 200 gr Salt 1 tablespoon

  • To buy fresh winged beans, you should choose those that are still young, straight, and have a bright green color.
  • You should prioritize choosing beans that are of moderate size, not too long or too short.
  • Additionally, you need to avoid buying winged beans that are infested, bruised, or have strange spots on the pods.

How to Prepare Pickled Dragon Beans

  • Prepare the Dragon Beans

    After purchasing young dragon beans, use a knife to cut off the stem and peel the strings on both sides of the dragon beans.

    Then, wash the dragon beans thoroughly to remove dirt.

    In particular, pay attention to the edges around the dragon beans as these are areas where dirt or pests often cling.

    Next, cut the dragon beans into 2 – 3 equal parts according to your personal preference and place them in a basket to drain.

    Place a pot on the stove, pour in enough water to cover about 1/4 of the pot and turn on the heat to boil the water in the pot.

    When the water boils, add the dragon beans and boil until they are just cooked, then turn off the heat.

    Remove the dragon beans and place them in an ice water bowl to make the dragon beans crisper and tastier.

    After soaking for 30 minutes, remove the dragon beans and let them drain.
