How to choose good dried anchovies
- Observe the outside of the fish: it should have a clear yellow color, feel dry to the touch, and when smelling, it should have a slight fishy smell but not too strong.
- Choose anchovies with white eyes!
- If the dried anchovies are cloudy, have brown spots, or are leaking water, it means they have been stored for too long.
How to make Sweet and Sour Dried Anchovies

Prepare the ingredients
Buy dried anchovies, rinse them once with water and then soak them for 5 – 10 minutes in water to allow the anchovies to expand, while also easily removing dirt and sand stuck to them.
Then, take the anchovies out, rinse them again with clean water, and let them drain.
Peel and chop garlic and shallots. Cut the green onions into bite-sized pieces, keeping the green and white parts separate.
Slice the chili diagonally. Squeeze the lime to extract the juice.

Make the sweet and sour sauce
Mix lime juice with 1 tablespoon of sugar, 2 tablespoons of fish sauce, and 2 teaspoons of pepper, and stir well.

Fry and simmer fish with sweet and sour sauce
Place a pan on the stove, add 2 tablespoons of cooking oil and heat it up. Add the anchovies and fry until golden, then remove them.
Place another pan on the stove, add 2 tablespoons of cooking oil, then add the green onion, shallots, and minced garlic, and sauté until fragrant. Next, add the sweet and sour sauce, 1/2 cup of water, and 2 tablespoons of chili sauce, and bring to a boil.
Add the fried anchovies and chopped chili into the pan, stir well. Reduce the heat and continuously stir the fish until the seasoning is evenly absorbed.
Finally, sprinkle with green onions, stir well, and turn off the heat.
Tip: You can use the cooking oil from frying the fish to simmer the fish. -
