Oysters 400 gr Fried flour 1/2 cup Chicken egg 1 piece Bell pepper 3 pieces Pineapple 1/3 piece (also known as khóm/dứa) Red onion 1/2 teaspoon (finely chopped) Garlic 1/2 teaspoon (finely chopped) Chili powder a little Cooking oil 100 ml Common seasonings a little (salt/ monosodium glutamate/ seasoning powder/ pepper)

How to choose fresh ingredients

How to choose fresh oysters

  • Good oysters will have meat that is cloudy white with a slight yellow tint, not pale white, and must have the entire gut, with no foul smell.
  • Avoid choosing oysters that have a foul smell, are missing parts, or are greenish, as they may be old, bitter, and fishy, thus not tasty.
  • You can buy whole oysters at the market, or purchase shucked oyster meat at TasteVN supermarkets or other large supermarkets.

How to choose good pineapples

  • Color: Choose fruits that have a bright yellow color from the crown to the tip. There may be a few slightly green eyes, but uniformly yellow pineapples will be sweeter. Avoid choosing those with uneven colors, dark brown spots, or yellowish-red tints as they are overripe. It is also not advisable to choose green pineapples since they will take a long time to ripen.
  • Shape: Round, short pineapples will have more flesh compared to long, cylindrical ones.
  • Skin: The skin of an overripe pineapple will be wrinkled. Good, fresh pineapples will neither be too hard nor too soft; pressing your finger into it will not leave a dent.
  • Pineapple eyes: The larger and sparser the eyes, the better.
  • Aroma: Smell the crown; if it has a fragrant smell, then choose it. Avoid those with little or no scent as they are not ripe. Also, do not select fruits that have a slightly sour smell as they are overripe.

  • Pineapple crown: The greener the crown, the fresher the pineapple. If the crown of the pineapple is dry or turning brown, it indicates that the fruit is overripe.

How to choose good bell peppers

  • When buying bell peppers, you should choose those with a shiny, thick, smooth skin and still have the stem. It is advisable to buy heavy and brightly colored peppers, as these are fresh, delicious, and nutritious bell peppers.
  • You should avoid selecting bell peppers that are soft, feel flimsy, have blemishes, cracks, etc., as these are spoiled and lack nutritional value.
  • For this dish, you should choose male bell peppers (those with a tail that divides into 3 parts) to enhance the flavor of the dish and prevent the peppers from becoming mushy when grilled.
  • Additionally, you should only buy bell peppers from reputable food stores and major supermarket chains to ensure the products have been quality tested and have a clear origin.

  • Prepare the oysters

    After buying the oysters, wash them thoroughly with water. To eliminate the fishy smell, you can wash the oysters with salt, ginger, or cooking wine.

    • You should wash the oysters under running water so that mud and slime can easily wash away.
    • You can clean the slime from the oysters by covering them with flour and mixing gently, then rinse with clean water.

  • Prepare other ingredients

    Put 1/2 cup of frying flour, a little water (just enough to avoid the flour being too loose), 1 egg, 1 teaspoon of pepper, chili powder, and seasoning into a bowl and mix this mixture well. Stir until the flour is fully dissolved with the other ingredients and reaches a thick consistency.

    Wash the bell peppers, remove the stem and seeds, then cut into small squares about 1/2 finger length.

    Wash the pineapple, remove the stem, and cut into small triangular pieces about 1 finger length.

    Peel the onion, wash it clean, and then cut it into small cubes.

    Quick tip: You should choose bell peppers of different colors so that when the dish is completed, it will have a more appealing look.

  • Batter and fry the oysters

    Place the cleaned oysters in a bowl of flour and toss well to coat them evenly with flour.

    Add 100ml of cooking oil to a hot pan and wait for the oil to heat up. Then use a spoon to add each floured oyster into the pan and fry over medium-low heat. Turn the oysters until they become fragrant, and the batter turns golden and crispy, then transfer them to a plate.

  • Stir-fried Vegetables

    Place a pan on the stove, add 2 tablespoons of cooking oil, then add 1/2 teaspoon of minced garlic and shallots into the pan to sauté until fragrant.

    Next, add the onion and bell pepper and stir gently. When the mixture is slightly cooked, add the pineapple and stir well.

    Add 1 teaspoon of monosodium glutamate and 1 teaspoon of seasoning powder and mix well until the mixture is cooked and fragrant, then turn off the heat.
