- Do not choose beef tendon that is too white or has yellowish fluid and an unusual smell, as this indicates that the tendon has been stored for too long and has gone bad.

Prepare the beef tendon
Soak the beef tendon in diluted saltwater for about 10 minutes, then rinse thoroughly and let it drain. Peel the ginger, wash it clean, slice half thinly, and cut the other half into thin strips.
Effective tips to eliminate the odor of beef tendon- Method 1: Clean the beef tendon with diluted saltwater, then blanch the tendon with a bit of alcohol and white vinegar. Afterward, remove the tendon and soak it in ice water for about 5 minutes, then let it drain.
- Method 2: You can also replace the white alcohol and vinegar with a few slices of pineapple to blanch the beef tendon. This method not only helps eliminate the odor of the tendon but also makes it tender and gives it a mild fragrance.
Place a pot on the stove, add about 500ml of water, 1 teaspoon of salt, and the sliced ginger, then bring to a boil over high heat. When the water boils, add the beef tendon and cook for about 15 – 20 minutes.

Prepare the other ingredients
For bell pepper, first we will wash it clean, then use a knife to cut off the stem and the seeds inside, then cut it into bite-sized squares.

Sweet and sour beef tendon stir-fry
Place a pan on the stove, add 2 tablespoons of cooking oil, and turn the heat to high. When the oil is hot, add minced garlic and julienned ginger and sauté until fragrant.
When the ginger and garlic start to turn golden, gradually add the beef tendon, carrots, lotus root, and bell peppers that have been prepared.
Stir-fry quickly for about 3 minutes, then season the beef tendon and vegetables with 1 tablespoon of sugar, 1 tablespoon of ketchup, 1 tablespoon of satay, and 1 tablespoon of seasoning powder.
Mix well to let the seasonings absorb into the ingredients, then continue stir-frying for another 5 minutes until the vegetables are evenly cooked. Adjust the seasoning to taste, sprinkle celery leaves on top, and turn off the heat to finish.
