  • Choose lychee that is pink-red in color, round and even, with smooth spikes; on the contrary, avoid lychee with many spikes or those that are still green as they taste very sour.
  • Additionally, pay attention to choosing bunches of lychee that have stems attached to the fruit, and leaves that are still fresh and green because these fruits are usually freshly harvested and retain their sweetness.

  • Prepare and marinate the pork

    Pork shoulder should be washed clean, soaked in a diluted salt water solution for 2 – 3 minutes, then removed, rinsed with water, and drained.

    Cut the pork into bite-sized square pieces. Then marinate the pork with 2 tablespoons of soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of sesame oil, and 1 teaspoon of ground pepper.

    Mix well, then cover the bowl of pork with plastic wrap and place it in the fridge refrigerator for about 2 – 3 hours.

    Take the pork out of the refrigerator, beat 1 chicken egg and add it to the pork, mix well.

    Pour 200g of cornstarch into a bowl, add the pork that has been mixed with the egg, and coat the pork evenly with the flour.

    Put a pan on the stove and add 50ml of cooking oil. Add the floured pork to fry until it turns a beautiful golden color.

  • Stir-fried meat with sauce and vegetables

    Place a pan on the stove, add 2 tablespoons of sesame oil, and heat it up. Add the diced bell peppers and onions, and stir-fry for 2 – 3 minutes.

    Then, add the prepared sweet and sour sauce, stirring continuously.

    Dissolve 1 tablespoon of tapioca starch in 1/2 cup of water, stirring well until the starch is completely dissolved. Next, pour the tapioca starch into the pan, mix well, and cook for 4 – 5 minutes until the tapioca starch is fully cooked and the sauce thickens.

    Next, add the fried pork, stirring well for 3 – 5 minutes to allow the pork to absorb the seasoning evenly.

    Finally, add the lychee, stir-fry for 1 – 2 minutes, then turn off the heat.
