  • To buy fresh beef shank, you should carefully observe the color of the meat. Choose pieces that are bright red, with light yellow fat that appears plentiful on the meat. If the fat on the meat is too little, it will easily become tough and dry when cooked.
  • Good beef shank has good elasticity; when you press it with your hand, it should not leave a dent. The meat fibers should be tender, not too fine, and have the characteristic smell of beef.
  • Avoid choosing pieces of beef shank that are pale green, dark red with a hint of black, with dark yellow fat and round white spots on the surface of the meat. Beef that has been stored for a long time will have a foul smell and feel mushy to the touch.

How to choose fresh pineapple

  • Choose a pineapple that is bright yellow from the crown to the end or with a few slightly green spots. These are ripe fruits and will have a sweet taste.
  • Avoid choosing green pineapples, as they are unripe and have a sour taste.
  • Shorter pineapples (round shape) have more flesh than longer pineapples (long cylindrical shape).
  • Choose fruits with large and spaced-out eyes to retain thick flesh after peeling.
  • Select pineapples that are neither too hard nor too soft, and have no mold or leaking juice on the skin.

  • Prepare ingredients

    Wash the beef shank thoroughly with water, then cut it into large pieces for easier marinating.

    Tips to eliminate the smell of beef
    • Roast 1 piece of ginger until the skin is burned, then scrape off the burnt skin and crush it. After that, rub the roasted ginger thoroughly on the beef to remove the smell, then wash it clean with water.
    • Alternatively, use the juice of 1 lemon or rub a lemon directly onto the piece of beef thoroughly, then rinse it well.

    Note: Limit washing the beef with water multiple times as it can lose the nutrients present in the meat.

    Pineapple (aromatic) you bought should be peeled clean, remove the eyes in a fan shape, and cut into thin slices.

    • First, cut the pineapple vertically from top to bottom into 4 equal parts.
    • Continue to cut along the length of the pineapple piece, then stop at the end of the fruit and cut firmly to separate the flesh and discard the skin.
    • You should not cut too close to the skin to avoid leaving any eyes of the pineapple. Finally, cut into smaller pieces according to your needs.

  • Marinate the beef

    Beef, after being cut into pieces, add 4 minced garlic cloves, 1 minced ginger, a little minced lemongrass, 1 spoon of seasoning powder, 1 teaspoon of soy sauce, mix well and marinate for 30 minutes.

  • Steamed Beef Brisket

    After marinating the brisket for 30 minutes, place it in a steamer for 90 minutes. You can use a regular pot for steaming, or you can use a steaming basket to steam the brisket.

    Next, take the steamed brisket and cut it into smaller pieces to soak the meat more easily and quickly.

    Tip: You can use a pressure cooker to save steaming time for the beef, as it only takes 20 – 30 minutes to soften the beef.

  • Make the Soy Sauce Marinade

    Add 400ml of water and 3 tablespoons of sugar into a pot, stirring until the sugar dissolves. After the sugar water boils, add more than half a cup of soy sauce, stir well, and let the soy sauce cool down.

    Then, add 6 minced garlic cloves, a bit of minced lemongrass, and 4 minced chili peppers, and mix the mixture with the cooled soy sauce.

  • Marinated Beef Brisket

    Put the cut beef into a glass jar, add 1/4 sliced pineapple, 1 sliced chili, a little sliced ginger, pour the cooked soy sauce over to cover the beef and let it marinate for 1-2 days. The marinated beef brisket in soy sauce is now ready.
