Vegan ribs 4 pieces Passion fruit 1 fruit Shallots 1 bulb Roasted sesame 10 gr Lettuce & herbs & cucumber 100 gr (side vegetables as per preference)

How to choose fresh and delicious passion fruit

  • You should buy passion fruits with a dark purple or brownish-red skin; the darker the skin, the sweeter and more fragrant the fruit.
  • Good passion fruit will have wrinkled skin, feel light when held, and emit a distinctive fragrance when sniffed.
  • Fruits with smooth, shiny skin that feel heavy are unripe and sour; if you like to eat shrimp with sour passion fruit sauce, you can choose this type.
  • Avoid purchasing fruits that have wrinkled skin but are leaking or soft, as these are old and spoiled.

How to make Passion Fruit Sauce Ribs (Vegetarian)

  • Prepare the ingredients

    Lettuce and herbs, pick off the old parts and roots, then wash thoroughly and drain.

    Peel and finely chop the shallots.

    For the passion fruit, extract the pulp through a sieve, discarding the seeds. After filtering, you can keep a few seeds to add to the sauce for decoration if desired.

    Soak the vegetarian ribs in water for about 15 minutes to soften, then boil briefly for 3 minutes to eliminate any unpleasant smell, and rinse with clean water and squeeze dry.

    Cut the ribs into bite-sized pieces (cut larger or smaller depending on your preference).

  • Fry the ribs

    Heat a pan on the stove until it’s very hot, then add 3 tablespoons of cooking oil.

    Wait for the oil to start bubbling, then add the ribs and fry until golden brown on both sides over low heat. Let one side of the ribs turn completely golden before flipping to fry the other side; flipping too early can break the ribs.

    Once the ribs are golden, pour out the oil and roast in the pan for about 5 more minutes to dry out, so that when you add the sauce, the ribs will still retain their crispiness.

    Tips for frying crispy and delicious ribs:

    • Make sure the ribs are very dry before frying; if they are still wet, the oil will splatter and stick to the pan.
    • When frying ribs, do not fry with excessively hot oil that is smoking; the ribs will burn quickly.
    • The frying oil should submerge about 1/3 or 1/2 of the rib pieces.
    • When frying, do not let the rib pieces stick together. Fry in moderate quantities to avoid reducing the oil temperature, which will prevent the ribs from being crispy and tasty.
    • If the ribs stick to the pan, turn off the heat, tilt the oil to one side, and wait for the pan to cool down, and the ribs will come off easily.

  • Making passion fruit sauce and stir-frying ribs

    You place a pan on the stove, wait for it to heat up, then add 1 tablespoon of cooking oil and sauté the shallots. When the shallots are fragrant, add the passion fruit juice and stir well, then add 2 teaspoons of sugar, 1.5 teaspoons of vegetarian seasoning, and 1/2 teaspoon of vegetarian fish sauce.

    Stir well for about 1 minute until the sauce thickens, then add the fried ribs into the sauce, stirring well for the ribs to absorb the seasoning before turning off the heat.

    You arrange the ribs on a plate, you can decorate them with lettuce, sprinkle toasted sesame on top, the crispy sweet and sour ribs are very delicious, you can enjoy them with rice or banh hoi, both are tasty, invite your family to enjoy it together.
