Chicken meat 500 gr Chicken egg 1 piece All-purpose flour 3 tablespoons Cornstarch 3 tablespoons Glutinous rice flour 3 tablespoons Tempura flour 3 tablespoons Baking soda 1 teaspoon Mozzarella cheese 300 gr Minced garlic 1 tablespoon Honey 1 tablespoon Korean chili sauce 3 tablespoons Ketchup 5 tablespoons Vinegar 1 tablespoon Cooking oil 300 ml Common spices a little (Salt/ ground pepper/ seasoning powder)

How to make Spicy Korean Cheese Chicken

  • Prepare and marinate the chicken

    To eliminate the smell of chicken meat, wash the chicken with diluted salt water for about 5 – 10 minutes, then drain, and cut into bite-sized pieces.

    Next, season the chicken with 1/2 teaspoon of salt, 1/2 teaspoon of ground pepper, and 1/2 teaspoon of seasoning powder, mix well and marinate for about 1 hour to let the chicken absorb the spices.

    After marinating, crack 1 egg into the bowl of chicken and mix well.

    Then, gradually add 3 tablespoons of crispy flour, 3 tablespoons of flour, 3 teaspoons of glutinous rice flour, 3 tablespoons of cornstarch, and 1 teaspoon of baking soda to the chicken and mix thoroughly.

    Finally, heat a pan on the stove, pour in 250ml of cooking oil, wait until the oil is hot, then add the chicken, frying over medium heat until the chicken is golden brown on all sides for about 7 – 10 minutes.

  • Make spicy sauce to mix with chicken

    Place another pan on the stove, add 50ml of cooking oil and 1 tablespoon of minced garlic, sauté until fragrant and golden over low heat for about 3 minutes.

    Next, add 3 tablespoons of Korean chili sauce, 5 tablespoons of ketchup, 1 tablespoon of honey, and 3 tablespoons of water into the pan. Stir well for about 5 – 7 minutes until the mixture is well combined.

    Then, add 1 tablespoon of vinegar to the mixture and then add the fried chicken, stirring well for another 5 minutes.

    Finally, transfer the chicken to a heat-resistant glass bowl, sprinkle 300g of mozzarella cheese on top and bake the chicken in the oven at 175 degrees Celsius for 10 – 15 minutes.

  • Avoid buying potatoes with wrinkled skins, which feel soft when pressed, as most of these are old, wilted, and no longer contain many nutrients, resulting in a bland taste.

  • Spicy Cheese Chicken

    Place a pan on the stove, heat 1 tablespoon of cooking oil over medium heat for 2 minutes, wait until the oil is hot, then add 2 minced garlic cloves to sauté until fragrant.

    When the garlic is fragrant and golden, add the potatoes and stir-fry for about 3 minutes. Be careful to stir gently so the potatoes do not break.

    Next, add the marinated chicken and stir-fry together. To prevent the chicken from drying out, use a little water to rinse the remaining spices in the marinating bowl and pour it into the pan.
