How to choose fresh and quality pork ribs
- To buy fresh and delicious pork ribs, you should choose ribs that are light pink in color, have good elasticity, and quickly return to their original shape when pressed lightly. When touching the meat, it should feel slightly sticky.
- You should choose ribs with thin, moderately flat bones because these pieces will have more meat!
- You should not buy ribs that are pale in color, feel slimy when touched, and have an odor as these may be old meat that has spoiled and lost its sweetness. Eating such pieces of meat can easily cause food poisoning.
How to make Spicy Salted Fried Ribs

Prepare the ingredients
After purchasing the ribs, wash them with water to clean. Then, soak the meat in diluted salt water for 5 – 10 minutes to remove the odor and rinse it again with water. Next, use a knife to cut the ribs into bite-sized pieces.

Marinate the pork ribs
Put the cut pork ribs into a large bowl. Then, add 1 tablespoon of seasoning, 1 tablespoon of ground pepper, 1 tablespoon of sugar, 2 tablespoons of minced garlic, 2 tablespoons of minced lemongrass, 3 tablespoons of cooking oil, 1/2 tablespoon of minced chili, and 6 tablespoons of fish sauce.
Use your hands to mix well so that the seasoning coats the ribs evenly. Marinate the pork ribs for at least 30 minutes to let the meat absorb the seasoning. For the best flavor absorption, you can marinate the ribs overnight in the fridge refrigerator!

Fry the ribs
Place a pan on the stove, when the pan is hot, add about 8 tablespoons (2 ladles) of cooking oil. Then, place the ribs in the pan, pour all the marinade into it, and stir well.
Add an additional 150ml of fresh coconut water and stir the ribs to ensure all sides absorb the seasoning and coconut water. Cover the pan and let the ribs fry for 30 minutes.
After 30 minutes, open the lid and stir the ribs one more time, then turn off the heat and plate the ribs; it’s done!
