Apple snail meat 200 gr Lemongrass 2 stalks Chili 2 pieces Minced shallots 1/2 tablespoon Minced garlic 1/2 tablespoon Curry oil 1/2 tablespoon Curry powder 1/2 teaspoon Fish sauce 1/2 tablespoon Common seasoning a little (salt/ seasoning powder/ monosodium glutamate/ sugar/ ground pepper)

  • A tip to identify live apple snails is to touch the part of its shell; if they immediately retract inside and the shell closes tightly, that is a fresh, live snail.
  • Choose snails with plenty of meat, where the shell is close to the outer edge, exposing some meat inside, the shell is not chipped, and when held, it has a natural scent.
  • Avoid choosing dead snails that have a strong, foul smell, with the shell pulled deep inside, that feel very light when held, and float on the water’s surface. These snails, when eaten, will have an unpleasant smell, are not tasty, and can easily cause poisoning.
  • For prepared apple snails, you should choose freshly made ones, with a characteristic aroma, without any fishy or slimy smell.

How to cook Stir-fried Snails with Curry

  • Prepare the ingredients

    Remove the outer leaves of the lemongrass, wash it clean, then slice it thinly; wash the chili and cut it into pieces or slices.

    Soak the snail meat in diluted salt water for about 30 minutes and then wash it clean before cutting it into bite-sized pieces.

    • Method 4: Boil the snails for about 5 minutes to partially cook them, then take them out, drain, and proceed to separate the snail meat, then wash it clean with water again.

  • Stir-fried apple snails

    Put a pan on the stove, add 1/2 tablespoon of curry oil, then add chopped onion and garlic, 1/2 teaspoon of curry powder, and sliced lemongrass to sauté the mixture until fragrant.

    Then, add the apple snails, season with 1/2 tablespoon of fish sauce, 1/2 teaspoon of sugar, 1/2 teaspoon of monosodium glutamate, 1/2 teaspoon of seasoning powder, sliced chili, and a little water.

    Stir-fry for about 2 – 3 minutes until the apple snails are cooked and the sauce thickens, then season to taste for your family and turn off the heat!

    Serve the curry stir-fried snails on a plate and sprinkle a little ground pepper to finish!
