How to choose beef
- You should choose tenderloin or chuck beef for stir-frying as these are the tender, juicy cuts that are less chewy.

How to cook Stir-fried Beef with Sour Bamboo Shoots

Prepare the ingredients
After buying the beef, rub it with coarse salt, then wash it several times with water to remove dirt, bone fragments, or blood stains on the outside. Next, slice the meat into thin pieces suitable for eating.
Peel the garlic and shallots, then chop them finely. Wash the green onions and coriander, then cut them into small pieces or sections as you like. Slice the chilies diagonally.
After purchasing the sour bamboo shoots, split them in half, then cut them into long strips or bite-sized pieces, and rinse them several times with water until clean.

Marinate beef and boil sour bamboo shoots
Sliced beef will be marinated with 1 teaspoon of salt (or replaced with seasoning powder), 1/2 teaspoon of monosodium glutamate, and 1 teaspoon of cooking oil to make the meat more tender.
Mix well and let the beef marinate for about 10 – 15 minutes. In the meantime, you can boil the sour bamboo shoots.
Accordingly, bring a pot of water to a boil, add the sour bamboo shoots into the pot, and add 1 teaspoon of salt, then turn on the stove to boil the sour bamboo shoots. When the water boils, use chopsticks to stir the bamboo for 3 – 5 minutes, then take it out and immediately place it in a bowl of cold water.
Wash the bamboo shoots again with water, then drain in a colander.

Stir-fried beef with pickled bamboo shoots
You place a pan on the stove, add 1 tablespoon of cooking oil and half of the chopped garlic and onion to sauté until fragrant. When the garlic and onion turn golden, add the beef, stir-frying quickly over high heat until the beef is just cooked and browned, then transfer it to a plate.

Season the pickled bamboo shoots with 1 teaspoon of salt, 1 teaspoon of oyster sauce, 1/2 teaspoon of fish sauce, and 1 teaspoon of monosodium glutamate.
Then, add the beef back into the pan to stir-fry together with the pickled bamboo shoots, mixing well so that the flavors combine. After that, adjust the seasoning to taste, then add the chopped green onions, cilantro, and chili, stir a few times, and turn off the heat.
