How to Choose Fresh and Delicious Squid
- Choose squid that has a shiny color, with a milky white body and dark brown spots.
- When touching the squid body, if it is fresh, it will be firm and have high elasticity; pressing it will quickly return to its original state without leaving a dent.
- Observe the eye color of the squid; fresh squid has clear eyes, not bulging out, with a visible pupil and no yellow fluid leaking.
- Do not buy squid that has an unpleasant odor, is slimy, or has unusual dark colors.
Stir-fried Squid with Satay Recipe

Prepare the squid
First, remove the ink sac and the squid’s guts, then wash the squid with a mixture of salt and vinegar and rinse with clean water, then drain.
Next, boil water with 1/2 onion, then quickly blanch the prepared squid and remove it to drain.
For the remaining 1/2 onion, cut it into wedges. Chop the green onion into pieces about 3 finger lengths.
How to clean squid properly, without a fishy smell: To reduce the fishy smell of squid, when washing, you can add 2 tablespoons of white wine and rub the squid evenly. -
Make the sauce
In a bowl: 2 tablespoons of fish sauce, 1 tablespoon of sugar, 1 tablespoon of chili satay, 1 tablespoon of chili sauce, 1 teaspoon of ground pepper, stir well to dissolve the sauce mixture.

Stir-fried squid
Add oil to the pan and heat it up, then add minced chili and garlic to sauté until fragrant.
Next, add the prepared sauce mixture and stir well until it thickens. Then, add the squid and stir-fry for 5 minutes over high heat.
Finally, add the onion and stir-fry for another 2 minutes, then add the green onions and turn off the heat.
Tip: It is best to stir-fry the squid quickly over high heat; do not stir-fry for too long as the squid will shrink, become chewy, and lose its sweetness. -
