- For fresh squid, when you press gently with your hand, it should feel firm and have elasticity, and the skin should still be intact without any tears.
- Do not choose squid that is soft, mushy, and has cloudy white eyes and body as these are not fresh, and the meat will not be chewy or sweet.

- To choose fresh and delicious tomatoes, first you should select those with shiny, smooth skin, bright red color, and uniformity.
- Next, you should observe the stem part; choose tomatoes that have a fresh, green stem that is firmly attached to the fruit.
- Conversely, avoid selecting tomatoes with wilted stems, uneven skin color, soft or mushy flesh as these are fruits that have been stored for too long or are spoiled.

- When choosing pineapples, you should select those that have a yellow color mixed with a bit of green, and a bulbous shape as these are usually meaty and ripe, making them sweeter when eaten.

How to prepare Spicy Sour Squid Hot Pot

Prepare and marinate the squid
When you buy the squid, peel off the outer skin, remove the backbone and the black ink sac from the belly, then soak it in a mixture of 1 small piece of minced ginger and 30ml of white wine for about 5 minutes.
Tip: Soaking squid with ginger and wine helps eliminate the fishy smell and effectively cleans the slime of the squid.Next, use a knife to cut the squid into bite-sized pieces, then add 1 spoon of sugar and massage it until you see that the squid is completely free of slime, then rinse with clean water. Remove the squid and let it drain, then arrange it on a plate.

Prepare other ingredients
Peel the garlic and shallots, rinse briefly, then finely chop and place in two separate bowls. Peel the pineapple, remove the eyes, rinse briefly, and cut into thin slices, each about 1cm thick.
Rinse the tomatoes, remove the stem, and cut into quarters like a wedge. Slice the chili peppers thinly and place them in a bowl.

Cook sour and spicy broth
Place a pot on the stove, add 2 tablespoons of cooking oil into the pot. When the oil is hot, add minced garlic and sauté until fragrant over medium heat. After about 3 – 5 minutes, when the garlic turns golden, remove it to a bowl.
Next, add the minced shallots to the pot to sauté until fragrant for the hotpot broth. When the shallots start to smell good, gradually add tomatoes and pineapple to stir-fry together.
Stir-fry for about 5 minutes until the tomatoes and pineapple are slightly soft, then pour in 600ml of fresh coconut water and turn up the heat to boil. For the hotpot broth, we will season with a mixture of spices including: 1 packet of sour soup seasoning, 3 teaspoons of chili paste, 1 tablespoon of sugar, and 3 tablespoons of fish sauce.
After about 15 minutes, the hotpot broth starts to boil. At this point, add sliced chili and sautéed garlic on top and adjust the seasoning to taste before turning off the heat.

Completion
With the sour and spicy squid hotpot, you simmer it gently to keep the broth hot. As you eat, dip the squid and vegetables into the broth. Or if you prefer, you can add everything at once and take it out to enjoy gradually!
Cooked squid can be wrapped in rice paper and dipped in chili fish sauce, or you can pour the hotpot broth over noodles to eat, both are fine.
