How to Cook Stir-fried Winged Beans with Eggs

  • Prepare the ingredients

    Cut off both ends of the winged beans, soak for 10 minutes in diluted salt water, then rinse with clean water. After that, use a knife to cut into bite-sized pieces.

    Next, peel the garlic and chop finely, wash the green onions and cut into pieces.

  • Stir-fry winged beans with eggs

    Place a pan on the stove with 2 tablespoons of cooking oil and heat it. When the oil is hot, add garlic and sauté until fragrant.

    Next, add the winged beans, 1 teaspoon of sugar, 1/3 teaspoon of salt, and 1/2 teaspoon of monosodium glutamate. Stir-fry the mixture over medium heat for about 5 – 7 minutes for the winged beans to absorb the seasonings.

    Then, crack in 3 duck eggs, stir the mixture well for another 3 – 5 minutes, taste and adjust the seasoning if necessary, turn off the heat, and sprinkle with chopped green onions and pepper to finish.
