Cauliflower 1 head Broccoli 1 head Young corn 100 gr Peas 50 gr Fresh shiitake mushrooms 100 gr Bell pepper 1 piece Onion 1 bulb Carrot 1 piece Chinese chives 5 sprigs Spring onion 5 sprigs Cooking oil 2 tablespoons Soy sauce 1 tablespoon Vegetarian oyster sauce 1 tablespoon Vegetarian seasoning 1/2 tablespoon Common spices a little (sugar/ salt/ ground pepper)

How to prepare Mixed Vegetable Stir-Fry

  • Prepare the vegetables

    Cut off the tough stems of the broccoli and cauliflower, then use a knife to separate the broccoli into florets. Rinse gently with water and drain.

    Remove the husk and silk from the baby corn, cut off the ends, and slice it in half lengthwise. Cut off both ends of the snow peas and remove the fibers from the sides.

    After peeling the carrot, cut it into thin slices. If you like, you can carve it into flower shapes to make the dish more appealing.

    For shiitake mushrooms, cut off the stems, and make a cross shape on the caps. You can keep the mushrooms whole during cooking or cut them into three equal parts.

    Cut off the tail and the top of the bell pepper, then remove the core and seeds. Slice the pepper in half and cut it into long strips, then cut into small square pieces.

    After peeling the onion, cut it into small square pieces. Cut the chayote into pieces about the length of a finger. Finely chop the scallions.

  • Soak and wash the ingredients

    Prepare half a bowl of water, then add one tablespoon of salt into the bowl of water. Next, put all the chopped vegetables into the salt water and use chopsticks to mix well.

    Let the vegetables soak in the salt water for about 5 minutes to help them become cleaner. Do not soak for too long to avoid making the vegetables salty during cooking.

    Then, take the vegetables out into a basket, wash them thoroughly with water, and let them drain.

  • Blanching vegetables

    Place the pot on the stove, add 1 liter of clean water to the pot, then add 1/2 tablespoon of salt and 1/4 tablespoon of sugar, use chopsticks to stir well to dissolve the seasoning, then boil on high heat until the water boils.

    Add the carrots to blanch for about 5 minutes, then quickly remove them and place them in a basket. Next is the time to blanch the cauliflower, about 3 minutes. Blanch the mushrooms for about 2 minutes.

    For baby corn, broccoli, and peas, blanch them in the pot until the water starts boiling again, then remove them immediately and let them drain.

    Note:

    • Blanching vegetables helps to partially cook them, reduce bitterness, and also helps eliminate bacteria and impurities. It keeps the vegetables bright in color during preparation.
    • Blanch vegetables over high heat, so add enough water to cover the vegetables to ensure they are cooked just right as desired.
    • Do not cover the pot tightly during blanching, remove the vegetables as soon as they are cooked to maintain their crunchiness and nutritional value, then rinse briefly with cold water and let drain.
    • Avoid blanching for too long as this will cause the vegetables to lose their crispness.

  • Stir-fried vegetables

    Put a pan on the stove, add 2 tablespoons of cooking oil, wait until the oil is hot, then add chopped green onions to fry until fragrant. When the green onions start to smell good and turn slightly yellow, turn off the heat.

    Next, add 1/4 tablespoon of sugar, 1/2 tablespoon of vegetarian seasoning, 1 tablespoon of soy sauce, and 1 tablespoon of vegetarian oyster sauce into the pan and mix all the seasonings together.

    Finally, add all the pre-cooked vegetables, bell peppers, and prepared onions into the sauce and stir well so that the vegetables absorb the seasoning evenly.

    When the vegetables have absorbed the seasoning, turn the heat back on. Stir quickly and stir-fry the vegetables for about 2 minutes, then add green beans and 1/2 teaspoon of ground pepper to stir-fry together. Mix the vegetables well and adjust the seasoning to your taste, then turn off the heat.

  • Prepare the vegetables

    Carrots and kohlrabi should be peeled using a knife after purchasing, and the string beans should have the fibers removed from both sides. For the green onions, cut off the roots and remove any withered leaves.

    Then, wash all the vegetables including carrots, kohlrabi, red bell pepper, green onions, and string beans thoroughly with water and let them drain.

    Once the vegetables are drained, cut them into pieces about half a finger wide, and chop the green onion separately, then place each type in the same plate.

  • Stir-fry the vegetables

    First, place a non-stick pan on the gas stove, then add 3 tablespoons of cooking oil into the pan. Once the oil is hot, add the chopped green onion to sauté until fragrant.
