Ingredients for Rươi Cake For 4 people

Rươi 1 kg Lean pork shoulder 300 gr Eggs 4 eggs (chicken or duck eggs) Green onions 3 stalks Chili 1 piece Cooking oil A little Common spices A little (MSG/ pepper/ seasoning powder/ soup seasoning) Dill A little Dill/ tangerine peel/ leafy mustard A little (adjust ingredients according to preference)

How to choose fresh and delicious meat

  • It is recommended to buy whole pieces of meat and chop them yourself to ensure safety, as pre-ground meat is difficult to assess quality.
  • Choose meat with a dry membrane, bright red color, slightly firm surface, and tender texture.
  • The meat should not have an unusual smell, and when touched, it should feel elastic.

How to choose fresh and delicious rươi

  • It is advisable to choose fresh rươi that are medium-sized (not too big and not too small), bright pink in color, and still alive.
  • When buying rươi, you should select those that are lying on the surface as they will be fresher and tastier.
  • Avoid buying rươi that are small, very skinny, have a dull color, move weakly, and are less active, as these are rươi that are about to die.
  • It is best to buy from reputable places in markets, supermarkets,… to ensure the quality of the rươi.

  • Prepare the ingredients

    Wash the ingredients thoroughly, then chop the green onions, dill, and wild betel leaves. Cut the chili into small pieces.

    Wash the mandarin peel, then cut it into thin, small strips.

  • Prepare the rươi

    For fresh rươi, you should prepare them by placing the rươi in a basin of water and gently washing them with your hands to avoid breaking their bellies. Next, you should mix hot water at about 60 degrees and then add the rươi.

    Then use chopsticks to stir gently a few times so that the mud, hair, and legs of the rươi fall off and float up, then scoop the rươi out.

    For frozen rươi, you should transfer the frozen rươi from the freezer to the refrigerator to gradually thaw, then prepare them like fresh rươi. You should not use soaking in water or a microwave to thaw because it can lead to bacterial contamination, which is dangerous.

    Put the cleaned rươi into a bowl, along with the seasonings including: 1/2 teaspoon of monosodium glutamate, 1/2 teaspoon of pepper, 1 tablespoon of seasoning powder, 1 tablespoon of salt, then mix well.

    Next, add 4 eggs, minced meat, vegetables, tangerine peel, and chopped chili into the bowl and beat the eggs with the mixture.

    • Only add a little tangerine peel because adding too much will make the dish bitter.
    • You can adjust the amount of chili to increase or decrease, or not use it according to your family’s taste.

  • Frying the rươi cake

    Add 2 tablespoons of cooking oil to the pan and heat it, then add the rươi mixture to the pan and fry over medium heat, covering the pan, and fry for about 5 – 7 minutes, until the rươi is slightly cooked and turns golden.

    After 5 – 7 minutes, reduce the heat, uncover, and continue frying like frying eggs, flipping to fry both sides evenly golden, then turn off the heat.

    Tip: It is advisable to fry over medium heat to prevent the rươi from burning, and do not fry too much as the rươi cake will become dry, losing its inherent deliciousness.

    After you have finished cooking, serve it immediately while it’s still hot. The fried rươi cake with its attractive, rich flavor and distinctive yellow color will be a wonderful dish!

  • Put the rươi in a storage container and then place it in the refrigerator or freezer.
  • Thaw the rươi by transferring it from the freezer to the refrigerator to thaw gradually.
  • Do not store rươi in the freezer for too long because if kept too long, the rươi will lose its taste, nutrients, and will not be good for health.
