How to choose fresh and delicious bananas

  • You should choose ripe bananas that have both green and yellow parts, these are naturally ripened bananas.
  • Good ripe bananas will have a thin outer skin. Bananas with dark spots on the peel are mature, naturally ripened, and usually sweeter than those with a bright yellow color.
  • Bananas that are overripe will be yellow but have a firm stem and may still be slightly green.

  • Prepare banana leaves and mold

    Cut a fresh banana leaf, wash it clean, then cut it into pieces that fit the bottom of the mold.

    Use a clean cloth to dry the banana leaf and place it in the mold, creating a base layer for the cake.

  • Mash the banana

    You take 100g of banana, peel it, and then place it in a bowl. Add 50g of corn oil. Then you use a fork to mash the banana and mix it well with the oil.

    Tip: If you don’t have corn oil, you can completely use cooking oil, but corn oil will make your cake smell better.

  • Mixing the batter

    Separate the egg whites and yolks from 4 chicken eggs gently. Place the egg whites in another large bowl, while the yolks go into the bowl containing the bananas.

    We start with the bowl containing the egg yolks and bananas first; add 30ml of water and 1/3 teaspoon of salt, then use a whisk to mix this mixture until smooth.

    To ensure a smooth batter for a softer cake, use a sieve to sift 70gr of all-purpose flour and 20gr of cornstarch into the bowl with the eggs and bananas. Continue to mix the flour with the banana and egg mixture until it thickens, then you can stop and move on to the next step.

  • Whipping Egg Whites

    For the egg whites, add 1/2 teaspoon of lemon juice to reduce the fishy smell of the eggs, then use a hand mixer to whip the mixture.

    During the egg whipping process, add 30g of powdered sugar in 2 to 3 small batches instead of adding it all at once. Stop when you see the mixture is fluffy and smooth.

    Tips for whipping egg whites:
    • It is recommended to whip the eggs in one direction
    • To achieve a soft and smooth cake, you need to whip the eggs to a fluffy state, avoiding over-whipping as it may cause the cake to collapse or crack during steaming.
    • If using lemon juice or vinegar, use the correct amount, otherwise, the cake will change flavor. For safety, you should use cream of tartar.

    Next, you add all the whipped egg whites into the bowl containing the egg yolks, mix gently until they blend together, you will get a finished batter that is smooth and thick.

    Tip: You should gently fold (scoop and lift from the bottom) to avoid breaking the air bubbles, which would cause the cake not to rise.

    You pour the batter mixture into each prepared mold, do not fill them completely but leave some space for the cake to rise without overflowing.

    Finally, you add water to the steamer pot, wait for the water to boil, then place the cake in, steam for about 35 minutes until the cake is cooked and can be removed.
