  • When buying beef, you should choose pieces that have a bright red color, fresh appearance, with soft and delicious meat fibers, not too fine, and good elasticity.
  • To select the freshest beef, you should go to the market early because at this time, sellers have just restocked, allowing you to pick the freshest pieces of meat.

  • Prepare the Beef

    To eliminate the unpleasant odor of the beef after purchase, soak it in a diluted saltwater mixture for about 5 minutes, then rinse with clean water, drain, and cut into thin slices for easy eating.

    • Method 1: Since beef is not a particularly odoriferous meat, you can wash it thoroughly with water about 2 times to remove the unpleasant smell.
    • Method 2: Soak the beef in water with 1 roasted ginger piece that has been crushed for about 5 minutes, then remove and rinse with clean water.

    Add 2 tablespoons of sugar and 2 tablespoons of fermented fish sauce to a bowl, then stir well until the sugar is completely dissolved. After that, add all the minced garlic and half of the sliced chili. Mix well, and the dipping sauce is ready.

  • Steamed Beef

    Place a pot on the stove, add 100ml of water and a steaming rack into the pot. Next, evenly spread the sliced ginger, sliced chili, and sliced lemongrass on the steaming rack, then turn on the stove to medium heat and place the marinated beef on top of the ginger, lemongrass, and chili below.

    Cover the lid and steam for about 3 minutes until the beef inside the pot is slightly rare.
