Cao Bang steamed rice rolls are unlike any other type of steamed rice rolls from different regions. This specialty dish is enjoyed by locals with broth, soft-boiled eggs, and sausage. Ingredients for Cao Bang Steamed Rice Rolls Serves 4

Rice flour 200 gr Tapioca flour 30 gr Water 300 ml Cooking oil a little Salt a little Fish sauce a little Pork bone 100 gr Lean pork shoulder with fat and skin 150 gr Eggs 4 eggs Leaf sausage 10 pieces

How to make Cao Bang steamed rice rolls

  • Prepare the steaming mold

    Dip a clean cloth in boiling water, wring it out, place the cloth over the steaming pot, stretch it evenly, and tie it tightly with a string.

  • Mix the batter

    Add rice flour, tapioca flour, and salt into a medium-sized bowl, gradually add water and stir well until the batter is smooth and free of lumps.

    Let the batter rest for about 20 minutes.

  • Prepare the meat

    Remove some skin and cut the meat into small pieces before putting it into the grinder.

    Add a little fish sauce to the ground meat for better flavor.

    Sauté the ground meat until it turns light golden.

    Continue cooking the meat in a rice cooker or pressure cooker for about 2 hours to allow the meat to absorb the flavor well; this is the secret that not everyone knows.

  • Cook the broth

    Add the bone into the pot and simmer for 2 hours, skimming off the foam multiple times to make the water as clear as possible.

    Season with common spices to taste.

    Add the leaf sausage to cook together to enhance the flavor of the sausage and increase the aroma of the broth.

    Wait for the steam to rise a lot, then use a ladle to spread the batter evenly on the cloth, cover, and wait for about 2 – 3 minutes.

    Remove the pancake skin from the mold, place it on the cutting board, then add the meat filling, and fold it to create a complete rolled pancake.

    Continue to make another pancake skin, but this time break an egg on top, then fold the pancake skin before removing it from the mold.
