How to choose fresh ingredients
How to choose fresh chicken feet
- Choose chicken feet that have a natural pinkish-white color, with red bones.
- Choose chicken feet that are not slimy or wet to the touch, feel firm when held, with tight skin that has elasticity.
- Avoid choosing chicken feet that are quite fat, swollen, with skin that is not wrinkled, and of uniform size, as these may be water-injected chicken feet. Avoid buying chicken feet that have deformities, lumps, blood clots, or bruises.
How to choose and buy Vietnamese coriander
- Choose fresh Vietnamese coriander with small leaves, a distinctive aroma, not wilted, and without strange smells.
- Avoid buying Vietnamese coriander with large, glossy leaves as they are less fragrant and not as tasty as the small-leaved variety.

Prepare and marinate the chicken feet
Wash the chicken feet, trim the nails, and let them drain.
