Chicken 1 kg (1 chicken) Vietnamese coriander 50 gr Chili 3 pieces Vinegar 200 ml Salt 5 tablespoons

How to choose fresh chicken

For live chicken

  • When buying chicken, you should choose those with bright red combs, shiny feathers, and no unusual fluids coming from the nose and eyes.
  • Good live chickens will move flexibly, with slender, uniformly yellow legs, not wrinkled or struggling to breathe.
  • Avoid choosing chickens that appear droopy, with tails slightly down, closed eyes, and slow movements.

For processed chicken

  • You should choose chickens that have good elasticity, with naturally pinkish-red meat, not too pale or too dark.
  • Additionally, when purchasing, you should select chickens with a clear origin, with production dates closest to the purchase date, and sold in supermarkets, TasteVN, or reputable meat shops.
  • Avoid choosing chickens that feel soft, slippery, or deformed when pressed in areas like the thigh and breast. These may be chickens that have been pumped with water, resulting in a bland taste.

How to make Steamed Chicken with Salt and Chili

  • Prepare the ingredients

    After cutting the chicken’s neck, place it in the basin, add about 200ml of boiling water, and briefly soak the chicken until it’s fully wet, then remove it.

    Use your hands to pluck the feathers, and use a knife to cut off the sweat glands at the chicken’s cloaca, then rinse with clean water. Next, gut the chicken by removing all the internal organs.

    Rinse again with clean water and use scissors to separate the chicken parts, then eliminate the chicken’s odor by mixing 2 tablespoons of salt with 200ml of vinegar, rub it all over the chicken, and let it sit for 5 minutes, then rinse again with clean water and let it drain.

    • Method 1: Use vinegar mixed with salt and soak the chicken for 3 – 5 minutes, rinse multiple times with water, then let it drain.

    • Method 3: Take a few slices of lemon and a little salt, rub it all over the chicken, then rinse clean with water, and it’s ready for cooking.

  • Marinate chicken

    First, you put 3 tablespoons of salt and 3 chilies into a bowl, then use a pestle to pound the salt and chilies together until fine and mixed.

    Next, you use the pounded salt and chili mixture to spread evenly around the cut chicken pieces, place the chicken in a basin, and marinate the chicken in the salt and chili for about 45 minutes to let the flavors absorb.

    Place a pot on the stove, add 500ml of water to the pot, put a steamer on top, cover with a lid, and boil on high heat for about 2 minutes until the water in the pot boils, then place the marinated chicken on a plate and set the plate in the steamer.

    Cover the lid and steam for about 15 minutes until the chicken is just cooked, then open the lid and add 4 – 5 leaves of rau ram to the plate. After that, cover the lid again and steam for another 5 minutes for the chicken to be cooked and infused with the aroma of rau ram, and it’s done.
