Ground lean meat 500 gr Pork paste 500 gr Small shrimp 400 gr (peeled) Tapioca starch 1 tablespoon Wonton wrappers 32 sheets (steamed type) Sesame oil 1 teaspoon Minced shallots 100 gr Garlic oil a little (fried garlic in oil) Fried shallots 100 gr Carrot 1/2 piece (finely chopped) Green onions 50 gr (chopped) Sweet soy sauce 2 tablespoons Regular soy sauce 1 tablespoon Oyster sauce 1 tablespoon Common seasoning a little (seasoning powder/sugar/ground pepper/MSG)

  • You should choose pieces of pork that have a pinkish-red lean part, with a cloudy white fat, and when smelled, there is a characteristic aroma of pork.
  • At the same time, you can check the freshness of the meat by pressing it; if you feel good elasticity, then you should buy it because the meat is still fresh.
  • Avoid choosing pieces of meat that are pale white or have many bruises, when smelled they have a bad odor and feel slimy to the touch because they may have been stored for too long and are not delicious!

How to Make Shrimp Siu Mai Dumplings

  • Mix the filling and prepare the dumplings

    To mix the filling, put in a bowl a mixture of 500g ground pork, 500g sausage, 100g fried onion, 100g minced shallots, 1/2 grated carrot, 50g chopped green onions, 4 teaspoons seasoning powder, 1 tablespoon tapioca flour, 3 teaspoons sugar, 1 teaspoon ground pepper, 2 teaspoons monosodium glutamate, 1 teaspoon sesame oil.

    Mix the ingredients thoroughly and vigorously until it becomes sticky, then place it in the refrigerator for 20 minutes to rest.

    Next, to prepare the dumplings, lay the wonton wrappers flat, place a sufficient amount of filling in the center along with one shrimp, press down slightly, then fold the edges of the wrapper to seal it.

    Continue doing the same until all the filling is used up!

  • Steaming dumplings

    To make the dumplings look more appealing, brush a thin layer of cooking oil onto the surface of each dumpling and carefully place them in the steamer. When the water in the steamer is boiling, adjust the heat to medium and steam for 8 minutes.

    When the dumpling skin starts to wrinkle, it means they are cooked; let the dumplings sit in the steamer for about 10 minutes to cool before removing and plating them.

    To make the dumplings even more appetizing and prevent them from sticking together, brush the surface with a layer of garlic oil!

  • Making soy sauce

    To make the soy sauce, mix a combination of 2 tablespoons of sweet soy sauce, 1 tablespoon of regular soy sauce, 1 tablespoon of oyster sauce, 2 tablespoons of warm water, 1 teaspoon of seasoning powder, 4 teaspoons of sugar, and 1 teaspoon of monosodium glutamate.

    Stir well until the spices are completely dissolved, pour into a pot, place on the stove, and simmer over low heat until the mixture bubbles gently, then add a tablespoon of cornstarch mixed with water, stirring until the mixture thickens, then turn off the heat.

    Drizzle the sauce over the plated dumplings, sprinkle a little chopped scallion on top, and it’s ready to eat.
