How to choose fresh, delicious tuna
- For live tuna: you should choose fish with sparkling, clear eyes, where the pupils can be seen clearly, and bright red gills.
- When you press the skin or belly with your hand, if it feels elastic and not slimy, it is fresh tuna.
- For frozen tuna: if you choose to buy frozen tuna, you need to check the expiration date and it should only be used within one month from the date of catch to ensure the best quality of the fish meat.
- Fresh tuna will have clear eyes, not cloudy, slightly bulging, with pinkish-red gills, wet and shiny skin.

How to prepare steamed tuna with lemongrass

Prepare the ingredients
After buying the tuna, cut off the fins, remove the gills, clean it, and rinse it with salt water, then let it drain. Next, use a knife to make a few shallow cuts on the fish so that the marinade can penetrate deeper into the meat.
Wash the lemongrass and smash it. For the green onions, remove the roots, wash them, and cut them into pieces about 2 finger widths long, splitting the green parts into smaller pieces.
Then, peel the onion and pound it together with 2 chili peppers until finely crushed.

Marinate the tuna
You mix the mashed chili and onion with 1/2 teaspoon of seasoning, 1/2 teaspoon of sugar, 1/3 teaspoon of monosodium glutamate, and 1/2 teaspoon of ground pepper.
Then, you evenly spread the mixture on the fish and stuff a little into the fish’s belly, letting it marinate for about 15 minutes for the spices to soak in.
