  • You should choose tomatoes with smooth, shiny skin, plump and juicy, bright red color, and with green stems.
  • Do not choose those that have black spots or small black dots, or those with uneven colors of both green and red.
  • If you touch them and they feel too soft or too hard, or if juice comes out, then do not buy them, as they may be spoiled.

  • Cucumbers should be straight, not or slightly bent. Cucumbers that are long and uniformly sized are the type that are crunchy and tastier than short, round cucumbers.
  • Choose those that feel heavy, soft, have smooth skin, and do not have bumps, and choose smaller ones as they tend to be sweeter than larger cucumbers.
  • Avoid buying cucumbers that bulge out, are large in the middle or have a large head and small tail (and vice versa) as these are old cucumbers with lots of seeds, hard, and not tasty.

  • Mix the tuna

    Add 120g of drained canned tuna into a bowl, then add 1 tablespoon of oyster sauce, 1 tablespoon of olive oil, 2 tablespoons of diced onion, 1/2 teaspoon of pepper, and 1 tablespoon of sesame oil. Mix well to let the tuna absorb the seasonings.

    Tip: If you don’t like the strong taste of onion, you can soak the diced onion in cold water right after cutting.

  • Prepare the vegetables

    Clean the bean sprouts and rinse them several times with water, then drain in a basket.

    Wash the tomatoes, remove the seeds, and slice them into strips. For basil, pick the leaves, wash them clean, and let them drain.

    Peel the carrots, wash them with clean water, and drain in a basket. Then cut them into strips.

    For cucumbers, peel off the dirty or old skin, cut off both ends, and wash thoroughly with clean water. Like the carrots, you should also cut the cucumbers into strips.

    How to prepare cucumbers without bitterness: Cut off both ends of the cucumber and rub them together vigorously in a circular motion until a white froth appears. Remove this white froth, and the bitterness will be gone.

    Add 500 ml of water to the pot, season with 1/2 teaspoon of salt, place the pot on the stove, and bring to a boil. Once the water is boiling, add the carrots and cucumbers to blanch for about 1 minute, then remove the vegetables and place them in a bowl of ice water for about 10 minutes, then take them out to drain.

    Take a bowl of water and dip the rice paper in for about 5 seconds until it becomes soft and pliable. Place the rice paper on a clean plate or cutting board. Add a suitable amount of the mixture of bean sprouts, carrots, cucumbers, tomatoes, and tuna in the center of the rice paper.

    Next, place 2 basil leaves upside down, close to the edge of the rice paper. Fold the two ends of the rice paper over, then slowly roll it up.

    Tip: You shouldn’t soak the rice paper in water for too long as it will become mushy, making it difficult to roll and the final product won’t be aesthetically pleasing.

  • Making dipping sauce

    Add 2 cloves of garlic, 50g of cilantro, 2 chili peppers, 3 tablespoons of lemon juice, 1.5 tablespoons of good fish sauce into a blender, cover it, and blend until you get a smooth mixture.

    Tip for you: You check the thickness of the mixture, if it is too thin, you can add more cilantro to blend for a thicker mixture.

For fresh tuna

  • Choose fish with shiny, clear eyes, showing the pupil inside clearly.
  • If the fish’s eyes are sunken, it indicates that the fish has been frozen for a long time and transported a lot, and the meat will no longer be fresh.
  • Check the gills; if the fish is fresh, the gills will be bright red, while a spoiled fish will have dark red or even blackish gills.
  • Press your hand on the skin (especially on the belly) of the fish; if the skin has good elasticity and does not sink, then it is fresh fish.
  • The method of selecting tuna with fresh, red or not red meat is by using a needle. The redder and firmer the fish meat, the better; the clearer the fish meat, the lower the quality.
  • When puncturing the fish, take a sample of the meat and rub it on the palm of your hand; if you see a lot of water flowing and the meat is soft and flaky, this fish will not taste good.

For frozen tuna

  • When buying frozen tuna, you need to check the expiration date; frozen sea fish should ideally be used within 1 month from the date of catching.
  • Check if the packaging is torn or opened anywhere and observe the fish inside. You should not choose pieces of fish with a thick layer of frost because they may have been preserved for too long or have been thawed and refrozen.

    You put 2 tablespoons of fish sauce, 4 tablespoons of lemon juice, 30ml of water, and 2 tablespoons of sugar in a bowl and mix well until the sugar dissolves completely.
