  • Choose beef that is bright red or pink, press to feel its elasticity and firmness.
  • Prefer pieces of meat with interspersed white fat and bright yellow fat, as they will result in softer and tastier meat when cooked.
  • Additionally, buy pieces of meat with soft, small fibers and not too smooth.
  • Avoid buying pieces of meat with large fibers, dark red color, dark yellow fat, or meat that is soft, dull in color, and has a spoiled smell.

  • Delicious rambutan has a crispy skin, with intact spines on the outside. The flesh is opaque white, juicy, and has a light fragrance.

  • It is advisable to choose peppers with a base divided into 3 parts because when stir-frying, the dish will be tastier, crispier, and more flavorful.
  • Avoid buying peppers that are bruised, waterlogged, wrinkled skin, or with wilted stems.

How to prepare Stir-fried Beef with Rambutan

  • Prepare the beef and marinate

    Peel and finely chop the garlic and shallots.

    After purchasing, rinse the beef with clean water. To eliminate the smell of the beef, soak it in a diluted saltwater solution for 2 – 3 minutes, then remove and rinse thoroughly with water and let it drain. Cut the beef into very thin slices.

    Place the beef in a bowl and mix well with 1/2 tablespoon of seasoning, 1/2 teaspoon of salt, 1/2 teaspoon of monosodium glutamate, 1 tablespoon of sugar, 3/4 of the shallots, minced garlic, 1 tablespoon of fish sauce, and 1 tablespoon of oyster sauce.

    Mix the beef well and let it marinate for 15 minutes to absorb the flavors.

  • Prepare other ingredients

    Remove the skin from the rambutan, discard the seed, and keep only the flesh of the fruit.

    Peel the onion and slice it thinly. Wash the bell pepper, remove the seeds, and cut into strips.

    Cut the chili into rings. Pick the leaves and young stems of the Chinese celery, wash thoroughly, and cut into pieces about the length of a finger joint.

  • Sauté beef with the ingredients

    Heat a pan on the stove and add 2 tablespoons of cooking oil, heating it up. Add the remaining chopped onion and garlic, and sauté until fragrant.

    Next, add the beef and stir-fry over high heat for 2 – 3 minutes until the meat is slightly cooked, then add the rambutan and stir well.

    Continue by adding the onion and stir-fry for 2 – 3 minutes until the onion is cooked, until it turns translucent. Then add the bell pepper and stir-fry for 3 – 4 minutes.

    After that, add the sliced chili and celery, stir briefly, then turn off the heat. Adjust the seasoning to taste.
