- When choosing buffalo meat, observe and select pieces that have a deep pink or dark red color, darker in hue.
- Choose pieces that do not stick to your hand when touched, are firm, have elasticity, and do not leave a dent when pressed lightly.
- Do not choose pieces that are dry, mushy, overly bright in color, or have a foul smell.

How to prepare Stir-fried Buffalo Meat with Coconut Milk and Kach Leaves

Prepare the ingredients
After purchasing the buffalo meat, wash it thoroughly, drain the water, and cut it into thin, wide slices that are easy to eat.
Soak the kach leaves in diluted salt water for about 5 minutes, then take them out, rinse with clean water a few times, drain, and cut into pieces about 1 finger length.
Chop 1 red onion and 3 cloves of garlic finely. Cut 2 chili peppers into small pieces.
Trim the roots and old leaves of the green onions, then wash them clean and cut into pieces about 2 finger lengths.
Effective tips for cleaning and eliminating the smell of buffalo meat:- You can use white wine to wash the buffalo meat, which will make it cleaner and reduce the fishy smell.
- Alternatively, you can use ginger to remove the smell of buffalo meat; finely chop 1 piece of ginger and rub it on the meat for a few minutes, then rinse with clean water.

Marinate the buffalo meat
You place the buffalo meat in a bowl or plate to marinate, add 1/2 of the minced garlic and shallots prepared earlier. Add 1/3 teaspoon of salt, 1/3 teaspoon of monosodium glutamate, 1/3 teaspoon of seasoning powder, 1.5 teaspoons of sugar, and 1 tablespoon of fish sauce.
After adding the spices, mix well and marinate the meat for 20 minutes.

Squeeze the coconut milk
Put 200 grams of grated coconut into a bowl or plate, add 1 cup of water (about 500 ml), and mix well.
Prepare a sieve to filter the coconut residue, place the sieve over the bowl containing the coconut milk, and to ensure hygiene, you should wear cooking gloves.
Squeeze the grated coconut mixed with water vigorously into the bowl with the filtering items, one by one until all the grated coconut is used up.

Make beef stir-fried with water spinach and coconut milk
Place a pan on the stove, add 2 tablespoons of cooking oil and heat it. When the oil is hot, add the remaining chopped shallots and garlic to sauté until fragrant.
Then add the marinated beef and stir-fry on high heat for 5 minutes until the meat is browned.
Next, add the squeezed coconut milk, stir well, and cook on medium heat for 15 minutes.
When the coconut milk comes to a boil again, add the water spinach, stirring evenly for 1 minute until the leaves are just cooked. You can season to taste, then add chopped green onions and sliced chili, and turn off the heat.
