  • You should choose chicken intestines that are fresh with a pink-red color, no foul smell, and the liver should not have a dark or pale green color.
  • Gently press the intestines with your hand; if they are good, you will feel their elasticity and firmness. Old intestines or those from sick chickens, soaked for a long time will feel slimy, and squeezing them will show no elasticity, being mushy.
  • It’s best to buy chicken intestines from reputable sellers to ensure quality and freshness. If possible, you should go to chicken slaughtering facilities to buy the best intestines!
  • Do not buy chicken intestines from unreliable sellers, without clear origin to ensure food safety and hygiene for your dish.

How to choose fresh cucumbers

  • You should choose cucumbers that are medium-sized, elongated with a dark green and uniform color, without bruises or yellow spots as these indicate overripe cucumbers, which are not tasty.
  • Cucumbers should be straight, with little or no curvature. Cucumbers that are elongated and uniform in size are the type with a thicker flesh, which will be crunchier and tastier than shorter, round cucumbers.
  • You should choose heavier, soft cucumbers with a smooth skin, without bumps, and prefer smaller cucumbers as they tend to be sweeter than larger ones.
  • Avoid buying cucumbers that bulge in the middle or have a large head and a small tail (and vice versa) as these are overripe cucumbers, with many seeds, hard, and not tasty.

How to cook Stir-fried Chicken Guts with Cucumber

  • Prepare the ingredients

    Massage the chicken guts with a little salt, rinse well with water, then cut into bite-sized pieces.

    After washing the cucumber, cut off both ends and slice it into pieces about 2 finger lengths long. Then soak the cucumber in a little diluted saltwater for about 15 minutes, then remove it and place it in a basket to drain.

    Peel the pineapple, remove the eyes, rinse briefly with water, then cut into bite-sized triangular pieces.

    Cut off the roots and wilted leaves of the green onions, rinse well with water, then cut into pieces about 1 finger length long. Rinse the bean sprouts with water about 2 – 3 times, then let them drain.
