  • When buying pork, you should press the meat with your finger to observe; if you see the meat fibers are even, firm, not mushy, with good elasticity, not leaking fluid or slimy, then you should choose it.
  • You should not buy pieces of meat with strange colors, sour smells, leaking fluids, or being mushy because this meat has gone bad or has been frozen for a long time and is no longer good.

  • Prepare the ingredients

    When buying the meat, you should rinse it several times with clean water by dissolving a little salt and lemon into the water to ensure the meat is clean. Next, use a knife to slice the meat into thin pieces that are easy to eat.

    Tips to eliminate the smell of pork
    • Method 1: You should put the meat in boiling water to blanch for about 3 minutes, then drain the water to eliminate the smell.
    • Method 2: Soak the meat in diluted salt water, adding a few drops of alcohol or smashed ginger, and let it soak for about 20 minutes, then rinse thoroughly several times.
    • Method 3: You can also rub salt directly onto the piece of meat, let it sit for about 5 minutes, then rinse it thoroughly.

    The honeycomb leaves should be soaked in diluted salt water for about 10 minutes, then washed clean and cut into thin strips about 2 finger lengths long. Peel the red onion and garlic, then place them on a cutting board to crush and chop finely.

    Next, add the meat and honeycomb leaves into a bowl to marinate with the minced garlic, chopped onion, 1 tablespoon of fish sauce, 1 tablespoon of oyster sauce, and 1 teaspoon of ground pepper. Then wait for about 15 – 20 minutes for the meat to absorb the seasoning.
