    Cut the green onions to remove the roots and slice into pieces about 2 finger lengths. Peel the garlic and ginger, crush, and cut in half (note not to chop finely).

    Place a pan on the stove over high heat, add 3 tablespoons of cooking oil. Wait for the oil to heat up, then add garlic and ginger, sautéing for about 30 seconds before adding shredded carrots and shiitake mushrooms, stir-frying for about 2 minutes.
