How to choose good strawberries

  • Choose large, bright red, juicy strawberries that still have their stems and fresh green leaves.
  • Do not choose overripe strawberries as the inside may be dry and hollow.
  • Avoid choosing dull, misshapen, and rotten strawberries. Additionally, those with green skin and many spots should not be bought as strawberries will not ripen after being picked.

What is baking powder and baking soda?

  • Baking powder (also known as Bột nở) is a leavening agent used in baking recipes. In terms of composition, baking powder consists of baking soda and a certain amount of acid to interact with baking soda, along with a bit of starch. Because it already contains acid, baking powder can be used more flexibly than baking soda.
  • Baking soda (muối nở, bicarbonate soda, or sodium bicarbonate) is one of the components of baking powder and is itself a leavening agent.

How to make Strawberry Yogurt Cupcakes

  • Whip the butter mixture

    Put 115g of butter, 110g of sugar, and 1 teaspoon of vanilla into a bowl, and use a mixer to blend the mixture at medium speed until the butter is fluffy and light yellow in color.

    Then, add 2 eggs and continue mixing until well combined.

    Tip:

    • The butter should be softened at room temperature; press it with your hand to check that it is soft enough but not too soft or runny.
    • Be sure to whip the butter well because the rise and fluffiness of the cake depend on the air bubbles in the butter when whipped.

  • Mix the cake batter

    First, mix together 250g of flour, 1 teaspoon of baking soda, and 1/2 teaspoon of baking powder. Next, divide the dry mixture into 3 parts.

    Then, add each portion of flour to the butter mixture and mix well with 240ml of yogurt until smooth.

    Tip: You should alternate adding a little flour and a little yogurt, this will make it easier to mix.

    Finally, add 5 sliced strawberries to the bowl, mix well once more to complete.

  • Pour the cake batter

    Pour the batter mixture into paper cupcake molds and spread it evenly across the surface.

    Note: Only fill the cupcake molds about 1/2 full as the cake will rise after baking.

  • Bake the cake

    Preheat the oven to 180 degrees Celsius for 15 minutes, then bake the cake for 35 – 40 minutes at 180 degrees Celsius.

How to Store the Cake

Let the cake cool completely, cover the surface with plastic wrap, and store it in the refrigerator for 3 – 5 days.
