Ingredients for Stir-fried Surf Clams (Elephant Trunk Clams) with Garlic Serves 4 people

Surf clams 300 gr Garlic 1 bulb Unsalted butter 1 tablespoon Cooking oil 2 tablespoons Fish sauce 1 tablespoon Common seasoning a little (Sugar/ monosodium glutamate/ seasoning powder)

How to Choose Fresh and Delicious Surf Clams (Elephant Trunk Clams)

  • To buy fresh and delicious surf clams, you should choose those that are uniform, elongated, oval-shaped, tightly closed shells, and quickly close when touched, with a slightly fishy smell.
  • You should buy surf clams with a curved front head, a round back head, the valves slightly open at both ends that are the same size and longer towards the back, with a lot of clear water inside, which is a sign of freshness.
  • You should not buy clams that have opened shells, cloudy water inside, and a foul smell because these are not fresh surf clams.

How to prepare Tu Hai (elephant trunk snail) stir-fried with garlic

  • Prepare tu hai

    After purchasing tu hai, soak it in water, using a scrubbing pad to scrub multiple times until the outer shell is clean.

    Then, pour hot water at about 70 – 80 degrees Celsius into the snail, peel off the outer skin on the head of the tu hai, separate the shell, and wash the belly thoroughly to remove all sand.

  • Stir-fried razor clams with garlic

    Peel the garlic, crush it, and mince it finely. Next, place a pan on the stove, add 2 tablespoons of cooking oil. Wait for the oil to heat up, then add 1/2 of the minced garlic, sauté until fragrant, then remove and set aside.

    Using the same pan, add 1 tablespoon of unsalted butter. Wait for the butter to melt, then add the remaining minced garlic and sauté until fragrant. Next, add the razor clams and stir-fry on high heat for about 1 minute.

    After that, lower the heat and add 1 tablespoon of sugar, 1 teaspoon of monosodium glutamate, 1 teaspoon of seasoning powder, and 1 tablespoon of fish sauce, stir-frying well on high heat until the razor clams are cooked. Taste and adjust seasoning, then turn off the heat and serve on a plate topped with sautéed garlic.
