Razor clams 1 kg Pork fat 200 gr Scallions 10 stalks MSG/ seasoning powder 1 teaspoon

How to choose fresh and delicious razor clams

  • You should choose razor clams that are relatively uniform in size, large oval shape, elongated with two valves of equal size, the front end has a sharp curve while the back end is rounder, the valves slightly open at both ends, longer towards the back end.
  • Choose those with tightly closed shells; if they are open, touching them should cause them to close quickly, with a lot of clear water inside and a slightly fishy smell.
  • Do not buy old, rotten clams with open or slowly closing shells when touched, as they are about to die, with little murky water inside and a foul smell.

How to Prepare Grilled Razor Clams with Scallion Oil

  • Prepare the razor clams

    After buying the razor clams, use a knife to make a straight cut down the middle of the shell, then use a spoon to scrape out all the mud and internal organs inside.

    Rinse the razor clams thoroughly under running water to remove dirt and sand, then place them in a colander to drain.

  • Prepare other ingredients

    After buying the pork fat, rinse it briefly to remove dust and cut it into small pieces, then drain the water.

    Cut off the roots of the scallions, wash them well, shake off the excess water, and chop them finely into a large bowl.

    Place a pan on high heat and add the pork fat, stirring continuously. Continue stirring until the fat starts to melt, then lower the heat, still stirring to prevent burning and to achieve an even golden color.

    Tip: The fat needs to be wiped or dried to avoid splattering when added to the hot pan.

    When the pork fat has become crispy and all the fat has rendered out, turn off the heat.

    Transfer the crispy pork fat into a bowl with green onions, gradually pour in the right amount of fat into the bowl of green onions so that the fat covers the onions, allowing the hot fat to cook the onions.

    Season the green onions with 1 teaspoon of monosodium glutamate and 1 teaspoon of seasoning powder, mix well.

    You use a piece of aluminum foil to place the razor clam in the center, scoop some scallion oil and fried pork fat on top.

    Fold the clam meat over to wrap around the scallion oil, then squeeze tightly to seal the aluminum foil.

    Place the razor clam on a high heat charcoal grill and grill for about 10 minutes until the razor clam is cooked, and you can serve it on a plate right away!

    Tip: To keep the dish tidier while grilling, you can wrap the razor clam and grill it in aluminum foil; otherwise, you can still grill it normally without using aluminum foil!
