How to choose fresh shiitake mushrooms

  • You should choose to buy shiitake mushrooms that have a distinctive aroma, without musty or sour smells.
  • Avoid choosing mushrooms that are slimy, have dark spots, or are wrinkled at the tip.
  • The stalk of fresh mushrooms is usually firm, and the cap has a slightly brownish-yellow color, avoid choosing mushrooms with a dark brown color.
  • During the selection process, you should observe the mushroom stems; good shiitake mushrooms usually have thick and short stems.
