    Place kumquats in a bowl, add about 1 tablespoon of coarse salt and about 500ml of water, soak for about 10 minutes, then take them out and let them drain in a colander.

    Put a pot on the stove, bring about 1 liter of water to a boil, then add the kumquats to blanch for about 2 minutes before quickly taking them out and putting them into a bowl of cold water.
