How to choose fresh and delicious hường fish

  • You should choose fish that are still swimming vigorously, have clear eyes, pink gills, and skin without strange colors. Those are the freshest fish.
  • When choosing pre-prepared fish, pay attention to whether the fish’s eyes are still clear and bright. Avoid buying fish with sunken eyes and cloudy membranes.
  • Fresh fish will have pink gills, tightly attached, and will not be slimy, the flesh will be firm with high elasticity.
  • Avoid buying fish with gray gills, pale, loose flesh, and a slightly sour smell because at that point the fish has gone bad.

How to Cook Fried Mackerel with Fish Sauce

  • Prepare the Ingredients

    After purchasing the mackerel, clean the scales and guts, then soak the fish in diluted salt water for about 15 minutes to eliminate the fishy smell and slime.

    After 15 minutes, rinse the fish with clean water, drain it, and then use a knife to make two diagonal cuts on the body to help the fish cook evenly and absorb the seasoning better when frying.

    • Using Table Salt: You can soak the fish in table salt for about 5 – 10 minutes or rub salt on the fish’s body, then scale and rinse the fish thoroughly.
    • Using Lemon: When washing the fish, squeeze lemon juice into warm water, then soak the fish for 5 – 7 minutes and rinse with water to completely eliminate the fishy smell.
    • Using Ginger: Soak the fish in crushed ginger water for about 5 minutes. Ginger helps to remove the fishy smell and enhances the flavor of the dish.
    • Using Alcohol or Vinegar: When washing the fish, you can mix a few tablespoons of alcohol or vinegar into the water, then soak the fish for 5 minutes in that mixture and rinse with water.

    Peel the garlic, remove the stems from the chili, rinse briefly with water, then finely chop the chili and garlic and put them into a bowl.

    Next, add 1 teaspoon of monosodium glutamate, 1 tablespoon of sugar, 1 tablespoon of lemon juice, 2 tablespoons of fish sauce, and 2 tablespoons of water into the bowl with the garlic and chili.

    Mix the ingredients thoroughly until the seasonings dissolve. You can adjust the seasoning according to your family’s taste.

    Add 2 tablespoons of cooking oil to a pan, when the oil is hot, add the fish and fry on low heat for about 20 minutes until both sides of the fish are golden, then transfer the fish to a plate.

    You use another pot placed on the stove and add the prepared garlic chili fish sauce into it and let it simmer over medium heat. When the fish sauce boils, add the fish and stir both sides evenly.
