How to choose fresh red dragon fruit
- You should choose dragon fruit that has a round shape, fresh skin with uniform colors, dark red, and plump because these are freshly harvested fruits.
- Good dragon fruit usually has a stem and ears that are soft and pliable, light bright color, not twisted or withered.
- Additionally, when you press lightly on the dragon fruit with your finger, you will feel a bit soft but still firm, with a sweet, pleasant aroma.
- Avoid buying fruits with brittle roots that easily break, which feel soft when pressed, and have a strong or no aroma. These are likely overripe fruits that may be spoiled.

How to prepare flower-shaped sausage sushi

Mix vinegar and spinach salt
Add 1/2 tablespoon of salt, 1/2 tablespoon of sugar, and 1 tablespoon of vinegar into a bowl, stir well until the ingredients dissolve.
After purchasing, wash the spinach thoroughly, blanch it briefly in boiling water, then remove and rinse with cold water, placing it in a food zip bag along with 1/2 tablespoon of the freshly mixed sushi vinegar.
Seal the zip bag tightly, gently squeeze around the spinach to allow the vinegar to soak in evenly and let it marinate for about 15 minutes.
Tip: You can blanch the spinach and then mix it with sesame oil instead of using spinach salt, it will also be very delicious when eaten. -
Extracting color from red dragon fruit
Cut the dragon fruit into small bite-sized pieces, use a spoon to scoop out the flesh and put it in a bowl to mash. Next, you put the mashed dragon fruit into a sieve and filter to get the juice.

Mixing rice
First, divide the rice into 2 equal bowls.
Mix 1 tablespoon of sushi vinegar with 1 tablespoon of dragon fruit juice in a small bowl, stir well. Next, add the mixed solution to one bowl of rice and use a flat spatula to mix thoroughly so that the rice absorbs the color evenly.
Finally, add 1/2 tablespoon of sushi vinegar to the remaining bowl of rice, stir well for the vinegar to soak into the rice.

Roll the rice and shape the cherry blossoms
You cut a piece of seaweed crosswise into 5 equal small pieces with a width of about 2 finger joints.
Then you divide the pink rice into 5 equal parts, take 1 part and spread it evenly on the small piece of seaweed. Place it in the center of the bamboo mat to roll, then roll it back to form the petals.
Next, you place 2 small sushi rolls that you just rolled underneath and 1.5 cheese sausages on top in the center of the bamboo mat, arranging the remaining small rice rolls around the sausage, alternating with 1 salted spinach stem in between the small rice rolls.
Finally, you shape and roll it tightly so that the sushi pieces stick together and form the shape of cherry blossoms when viewed from both ends of the bamboo mat.
Tip:- If you don’t have cheese-flavored sausages, you can replace them with regular sausages or add a little crab stick, Chinese sausage to enhance the flavor.
- To make it easier to roll and shape the flowers, you should hold the bamboo mat up to arrange and shape it!

Completion
You place the white rice into the remaining piece of seaweed and spread the rice evenly into a large square shape on the dry seaweed.
Next, you place the piece of seaweed with the spread rice onto the bamboo mat and roll it into a flower-shaped sushi, rolling tightly to ensure the rice does not fall apart.
Finally, you cut the sushi roll into small bite-sized pieces to finish.
