How to choose delicious ripe gấc
- When choosing gấc, you should pay attention to select fruits with green and fresh stems as these are freshly picked gấc, the flesh will be firmer and tastier. Ripe gấc will turn a beautiful bright red color, and the spines will bloom evenly.
- On average, each good gấc that is just ripe will weigh about 1kg, so when buying gấc you should pay attention to this because if you choose lighter gấc, the flesh will be less and not tasty.
- When selecting, you can try gently pressing the gấc to check the firmness of the flesh, avoiding buying those that are too soft or too hard to ensure the quality of the dish.
Where to buy roasted sticky rice flour?
- You can easily buy roasted sticky rice flour at traditional markets, in supermarkets, or order it from reputable e-commerce platforms.
- Additionally, you can use regular sticky rice and roast it in a pan over low heat for about 30 – 40 minutes until the sticky rice releases a fragrant aroma and slightly changes to a creamy white color, then put it into a multi-functional grinder (the grinder used for grinding pepper, hard seeds, and rice) to grind it into fine flour and then sift it again.

Prepare and grind the gac
After purchasing the gac, you separate the seeds, peel the skin clean, then blend it with 1 cup of clean water until it forms a slightly thick red mixture.
Peel the ginger, wash it clean, then pound or grind it finely with about 1/2 cup of clean water.

Mixing and cooking the crushed gac mixture
Gradually add the finely crushed gac into the pot, 1/2 cup of crushed ginger, 4 tablespoons of cooking oil, 2.5 liters of clean water, 500g of malt syrup, and 1/2 kg of white sugar.
Proceed to cook the mixture over medium heat, making sure to stir evenly so that all ingredients dissolve completely and to prevent the mixture from burning.
Next, add 4 vanilla sticks to the gac mixture and stir well to enhance the fragrance and make it tastier when eaten.

Stirring the flour into the gac mixture
When the gac mixture has boiled for about 2 – 4 minutes and the ingredients are completely dissolved, turn off the heat and add 500g of roasted peanuts while continuing to stir well.
Then gradually add 2kg of cooked glutinous rice flour into the gac mixture, making sure to stir very evenly until the flour and gac mixture are completely combined and thickened.
Tip: To mix the flour more evenly and make it easier to combine, you can divide the flour into 2 – 3 portions and add them gradually to mix with the gac mixture! -
Pour the gac lam cake mixture into the mold
Spread 500g of cooked glutinous rice flour left over onto a large tray to make the dusting flour, then evenly sprinkle 500g of roasted sesame seeds over the surface of the flour.
Next, pour the gac mixture mixed with glutinous rice flour into the mold and shape it as desired, then let it cool for about 5 hours for the gac lam to set completely.
Finally, you proceed to cut the gac lam cake into small, bite-sized pieces, and it’s done!
