How to choose fresh squid

- Choose squid with clear packaging, specific origin, still within the expiration date, and the squid in the packaging should not be leaking, moldy white or black.
For fresh squid
- Choose squid of medium size from 5 – 12cm, wrapped in a thin reddish-brown skin.
- Fresh squid should have bright, clear colors, not cloudy, with the body and tentacles firmly attached. The belly should be taut and contain a lot of eggs.

Prepare the squid
Buy steamed salted squid from the market, blanch in boiling water for about 3 minutes, then remove and let drain.
How to prepare and remove the fishy smell of squidIf you buy fresh squid, you can prepare and remove the fishy smell as follows:
- First, gently pull off the tentacles and head of the squid to avoid breaking the ink sac. If you accidentally break the ink sac, rinse it thoroughly with water.
- Use a knife to cut off the eyes and tentacles of the squid, then peel off the skin.
- Clean the insides and head of the squid, then rinse thoroughly with water.

Make tamarind sauce
Squeeze tamarind into a bowl with 100ml of boiling water, use a spoon to mash to extract the sour flavor, then remove the seeds.
Add 5 tablespoons of sugar and stir well, then add 1 teaspoon of cornstarch and mix well.

Place a pan on the stove with 2 tablespoons of cooking oil heated over medium heat. When the oil is hot, add 1 tablespoon of minced garlic and sauté until fragrant.
