How to choose fresh and delicious duck meat
For live ducks:
- Choose ducks with smooth, shiny feathers, and the inside shows no down feathers, with long and fully grown outer feathers. Do not choose ducks with fluffy feathers, a bad smell, or drooping; these may be sick ducks.
- When holding the duck’s breast, it should feel round and plump, with thick skin on the neck and belly indicating good quality.
- If the two wings of the duck can cross each other, it indicates that the duck is an adult, easy to pluck feathers, and has a lot of meat.

Prepare the duck meat
