Ingredients for Sweet and Sour Tamarind Duck Serves 2

Duck thighs 2 pieces (you can also choose other parts of the duck) Tamarind juice 1 tablespoon Vietnamese coriander A little Lemongrass 1 stalk Chili 1 piece Garlic 3 cloves Ginger 1/2 piece Vinegar 1 tablespoon Chili sauce 1 tablespoon Fish sauce 1 tablespoon Cooking oil 100 ml Common seasoning A little (Sugar/ salt/ ground pepper/ seasoning powder)

How to choose fresh and delicious duck meat

For live ducks:

  • Choose ducks with smooth, shiny feathers, and the inside shows no down feathers, with long and fully grown outer feathers. Do not choose ducks with fluffy feathers, a bad smell, or drooping; these may be sick ducks.
  • When holding the duck’s breast, it should feel round and plump, with thick skin on the neck and belly indicating good quality.
  • If the two wings of the duck can cross each other, it indicates that the duck is an adult, easy to pluck feathers, and has a lot of meat.

For processed ducks

  • Choose ducks with a uniform light yellow color, feeling fresh. Do not choose ducks that are too dark or have bruises and spots.
  • Pressing on the duck should feel firm and elastic, indicating good quality; do not choose those that feel soft and mushy, have a rotten smell, or are watery, as these have been stored for too long and are not fresh.

Ingredients for duck dish with tamarind sauce

How to make Tamarind Sauce Duck

  • Prepare the duck meat

    After buying the duck, you will wash it thoroughly with a mixture of salt, ginger, and vinegar to remove the bad smell.

    To completely eliminate the odor, briefly blanch the duck in a pot of boiling water with about 1/2 piece of ginger for about 5 – 10 minutes. After that, remove it to drain and marinate with 1/2 teaspoon of seasoning for about 10 minutes.

    Tip: To help the duck meat cook faster and absorb the flavor better, use a toothpick or a sharp object to poke evenly into the duck meat.

    Next, you will place the pan on the stove, add 100ml of cooking oil, then add the duck legs and fry until golden brown on both sides over low heat for about 10 – 15 minutes.

  • Prepare other ingredients

    Lemongrass and garlic should be peeled, washed, drained, and then chopped finely.

    Mix the tamarind sauce with the formula including: 2.5 teaspoons of sugar, 1 tablespoon of tamarind water, 1 tablespoon of chili sauce, and 1 tablespoon of fish sauce.

    Add all the spices into a bowl and stir well until the mixture is completely dissolved and adjust the seasoning to your taste!

  • Make duck with tamarind sauce

    You place a pan on the stove, add the lemongrass and garlic to sauté until fragrant, then pour in all the prepared sauce along with 1/3 cup (rice bowl) of water.

    Next, you will add the fried duck and stir well to absorb all the spices. Adjust the seasoning to taste, and when the sauce thickens, turn off the heat.

    If you like spicy food, you can add some fresh chili to enhance the flavor!
