How to make Sweet Cassava Noodles with Coconut Milk

Knead the dough
Take 250 grams of rice flour and put it into a large bowl, add 1/2 teaspoon of salt, and mix well. Boil water until it is really hot, then slowly pour it into the bowl of flour, mixing continuously until there is no dry flour left, then stop.
Make sure the water is really hot and pour it slowly so the dough does not become too wet.Take the kneaded dough block, sprinkle the remaining 50 grams of flour gradually on top, kneading while sprinkling until the dough is smooth and elastic, and does not stick to your hands anymore. Let the dough rest for about 10 minutes, then proceed to cut the dough.

Boil the dough
Divide the dough into small portions, use a rolling pin to flatten the dough to about 0.5 cm thick. Then cut the dough into long strands.
Boil 500 ml of water, use a ladle to stir the water to create a current, then add the cassava noodles in batches to boil. While boiling, gently stir to avoid breaking the noodles.
When the noodles become transparent and float, they are done; you take them out and place them in a bowl of cold water to make the noodles chewier. Soak for 3 minutes, then take the noodles out and let them cool.

Cook the sweet soup
Put 1.5 liters of water, palm sugar, pandan leaves, and shredded ginger into the pot. Bring to a boil until the sugar completely dissolves; while boiling, be careful to skim off any foam that forms to keep the syrup clear and more beautiful.
Once the sugar has fully dissolved, add the tapioca noodles, simmer on low heat for an additional 10 minutes for the noodles to absorb the syrup, then turn off the heat.

Cook the coconut milk
Add 500ml of coconut milk to a pot, then add 1/2 teaspoon of salt, 3 teaspoons of sugar, and 1 tablespoon of tapioca starch, stir well, then turn on the heat and cook until the coconut milk thickens, then turn off the heat.
