How to Choose Good Quality Peeled Mung Beans
- When buying peeled mung beans, you should pay attention to choose beans that are yellow, with bright colors, and half of the beans intact, not broken.
- Good peeled mung beans will have a certain dryness, with a light fragrance from the mung beans, and no strange smell.
- Avoid choosing peeled mung beans that are moldy, infested with pests, or show signs of dampness, and have a strange smell as these beans are no longer usable.
- It is best to buy peeled mung beans that are packaged, with clear labeling on product origin, production date, and expiration date.

How to make Sweet Tapioca Cake with Mung Bean Filling

Cook the mung bean filling
Soak 50g of peeled mung beans overnight in water covering the beans to soften them, then rinse thoroughly, and steam or cook until done.
Put the cooked mung beans into a pan, add 2 tablespoons of cooking oil, 25g of sugar (about 1 tablespoon), and stir well over low heat until the mung beans thicken and no longer stick to the pan.
Tip: You can adjust the amount of sugar in the mung beans according to your preference for sweetness.

Kneading the dough and shaping
Put 200g of tapioca flour into a bowl, gradually add 170ml of boiling water, and mix well. Wait for the dough to cool a bit, then start kneading the dough multiple times until it becomes smooth and no longer sticks to your hands.
Tip: To prevent the dough from being too wet, you should add water gradually; if the dough feels dry, you can add more boiling water.
Divide the dough into 3 equal parts: one part you flatten and cut into bite-sized pieces, one part you shape with peanut filling.
Shape by taking a sufficient amount of dough, flatten it, then place the peanuts in the center and roll it into a ball.
For the remaining dough, take a small amount, flatten it, and add some mung bean filling, shaping it as you like.
Tip: Before shaping the dough, remember to use the remaining 20g of tapioca flour to dust your hands and tools to prevent the dough from sticking.

Cooking bánh canh dessert
Put 500ml of water, 250gr of sugar into a pot, and bring to a boil. When the water boils and the sugar dissolves, add all the bánh canh and cook for 15 minutes over medium heat.
While cooking the bánh canh, peel the ginger, wash it clean, then cut it into strips or smash it, and add it to the pot to cook together with the bánh. When the bánh is done, turn off the heat and enjoy.

- When you see the bánh canh floating to the surface, and the dough is translucent, that means it is cooked.
