How to choose good coconuts for making coconut jam
- If you want to choose good coconuts to make shredded or ball jam, you should select medium coconuts, meaning coconuts that are neither too young nor too old, with just the right hardness and chewiness, very suitable for shredding or forming into balls.
- Medium coconuts have a slightly light-colored shell, uniform color, and are not blotchy. If you press your nail into the coconut shell, you will feel its crispness and not toughness. The coconut meat should have a translucent white color, not clear or slightly cloudy, and the outer shell should be light brown.

How to make Coconut Candy Balls

Blanch the coconut meat
Buy coconut meat, wash it clean, then cut it into small square pieces. After that, wash the coconut several times with warm water until the water is no longer cloudy. Boil a pot of water, add the coconut and blanch for about 1-2 minutes. Then, drain the coconut in a colander to cool and let it dry.

Make the color extract
Cut the passion fruit in half, scoop out the pulp and strain it to get the juice to create yellow coconut candy.
Wash the pandan leaves, cut them into small pieces. Put them in a blender with a little water and blend until smooth. Use a sieve to filter out the residue, keeping the pandan juice to create green coconut candy.
Fresh unsweetened milk will be used to create white coconut candy.

Mixing the coconut flesh color
Divide the diced coconut flesh into 3 equal parts. Next, add 3 colors: passion fruit yellow, pandan green, and fresh milk white to each part of the coconut flesh.
Then, add 100g of granulated white sugar to each part and mix well, letting it marinate for 1 – 2 hours so that the coconut flesh absorbs the color and sugar.

Cooking the candy
Place a pan on the stove, add 1 portion of the coconut flesh and cook over medium heat while stirring continuously. When the sugar starts to thicken, reduce the heat and mix well until the sugar crystallizes and becomes sandy.
Continue to cook in the same manner with the remaining 2 portions of coconut flesh.

Tips for preserving coconut jam to keep it lasting and delicious
- After making the jam, you need to place it on a tray and let it cool completely before storing. This step is quite simple; however, being a bit impatient and storing the jam before it cools will cause the coconut jam to release water, losing its delicious taste.
- Store the coconut jam in plastic bags or airtight glass jars. When storing in jars, you should add a layer of sugar inside. The layer of sugar will act to absorb moisture from the jam, helping to preserve it longer.
- When using the jam, only take out a sufficient amount, avoiding taking out too much to limit the leftover jam’s exposure to the humid outside air, which can cause the jam to easily leak.
- Do not display the jam in a place that receives direct sunlight. The heat will cause the sugar to melt.
- If storing the jam in the refrigerator, limit taking the jam out or avoid bringing the whole jar (bag) of jam outside, as this can expose it to the outside environment, which may cause it to leak due to temperature differences, and the jam may lose its delicious taste.
- You should only store coconut jam for a maximum of 1 month to achieve the best quality for use. And be sure to discard the jam if there are any changes in color!
