  • Usually, good sweet potatoes are round or elongated, without any dents, and when gently squeezed, they are not too hard, which indicates they are less fibrous, starchy, and very sweet.
  • You should buy sweet potatoes that have a layer of powder or dirt on them. When cutting a thin slice from the end of the sweet potato, you will see a light orange color and sap flowing out.
  • Do not buy sweet potatoes that show signs of sprouting, have a bumpy surface, many holes, are cracked, or have pests.

  • Prepare sweet potatoes

    First, wash the sweet potatoes thoroughly, then use a peeler to remove the skin and soak the potatoes in a bowl of diluted saltwater for 5 minutes.

    Next, use a grater to shred the sweet potatoes into small strands, then soak the shredded potatoes in a bowl of diluted saltwater for 30 minutes, then remove and rinse them thoroughly and let them drain.

    Tip: If you use yellow-fleshed sweet potatoes, the dish will be tastier compared to other types of sweet potatoes.

  • Mix the batter

    We will put 100g of flour, 150g of crispy flour, 4 tablespoons of sugar, 1 teaspoon of salt into a bowl and mix well. Next, we add 50ml of coconut milk, 100ml of unsweetened fresh milk, 200ml of filtered water, and then use a whisk or a spoon to stir until the batter dissolves and let the batter rest for 30 minutes.

  • Fried Cake

    We heat up a pan on the stove, add a bit more cooking oil so that the oil covers the cake and bring the oil to a boil. When the oil is boiling, we will use a large ladle to scoop some batter, then pick up a bit of sweet potato and place it on the ladle and mix it to coat the sweet potato with a thin layer of batter.
