Steam purple sweet potatoes
Peel the sweet potatoes, cut them into pieces, soak them in water for about 15 minutes to reduce the milky substance, then rinse them again.
Place the sweet potatoes in a steamer and steam until they are soft.

Mashing sweet potatoes
Use a fork to mash the sweet potatoes until smooth.
Tip: Mashing the sweet potatoes while they are hot will make it easier and help achieve a smoother texture. -
Mixing the cake batter
Add 60g of sugar, 120ml of warm water, 100g of tapioca flour, 120ml of coconut milk, and purple sweet potato into a bowl, then stir well. Strain the mixture through a sieve for a smooth consistency.
In a new bowl, add 70g of sugar, 70ml of warm water, 170ml of coconut milk, and 140g of tapioca flour. Stir well and let the batter rest for 15 minutes.

Steaming the cake
Brush oil onto the mold, pour in a thin layer of purple batter and steam for 3 minutes.
After 3 minutes, pour in a layer of white batter and continue steaming for another 3 minutes. Repeat until all the batter is used.
Tip to prevent the cake from separating: You can use a toothpick to poke holes evenly on the surface of the cake, then pour the next layer.
